And the mustard, which is the hardest, has to be left to ferment. And if you ever want to make some salt, all you have to do is to take a bucket of sea water and leave it under the sun to evaporate :) .

The Vinegar and Salt are both preservatives and the eggs themselves are pasteurised. Also don't forget the entire process is cooled and sanitary. It won't go bad till it heats up and is opened which doesn't happen really since mayonnaise is kept in the fridge after you buy it.
Try McKormick's or La Costeña Mexican mayonaises, natural ingridients and sugar free, I also like Fud deli products none of them is sweetened with sugar,
