As an Alaskan, I can easily say his halibut filleting is top notch. But his salmon filleting is HORRENDOUS!! He wasted about 20% of the meat and got juices from the belly all over the meat. YUK!!! By sliding his knife in and getting an entire half in one swipe down the backbone, he left A LOT of meat along the backbone. From the end your salmon fillet should be a triangle. If you notice, you had flat slabs. So that entire triangle point was left of the fish and went into the garbage. We never, and I mean NEVER, allow deckhands to fillet our salmon. All they care about is getting it done and going home. So they don’t care if they waste 20% of your meat. WE care!!
