Corn starch is better dissolve in cold liquid, because it gets "cook" immediately upon contact with hot liquid causing lumps, thats why you had difficulty making the slurry smooth

I went with the chili powder. Unfortunately cilantro is not in our fridge. I don’t think it will matter that much. Hoping for the best. Thank you for sharing.

No mention of dried Basil in the video but recipe instructions calls for 4 Tbs of it. Hope I haven't ruined it but I'll add the Basil and give it a try.

Cornstarch does not dissolve well in hot liquids. Should use a cold liquids.

Definitely, always mix your slurry with cold water else it goes lumpy
It can be sieved or sifted into hot liquid, if its mixed while doing it, it won't congeal

At 1:33 she mentions the dried basil in the ingredients then check it out at 5:08 time stamp, she adds the dried basil to the pot. This may help.

If you like to add potatoes, I would recommend steaming them first with instant pot. You can add them once curry is done!

Absolutely! I would cook them separately, perhaps steam them first on instant pot and add on later when curry is done!
