How to Make Homemade Gravy (from Pan Drippings)

While it may be a little bit overlooked when it comes to Thanksgiving, making a homemade gravy doesn't need to be forgotten! Three necessary components come together to form a luscious sauce that's the perfect topping for the holiday!

INGREDIENTS
- 1 cup pan drippings from roasting turkey
- 2 cups potato water or stock
- 2 tbsp cornstarch
- 2 tbsp cognac
INSTRUCTIONS
Whisk to combine the cornstarch and potato water or stock.
Add the drippings back to the roasting pan or a small saucepan. Over medium heat, work up the browned bits on the bottom of the pan.
Add the cognac and stir. Bring to a simmer. Whisking constantly, slowly add in the prepared cornstarch slurry to the desired thickness. Thin with more potato water/stock or thicken with more slurry as needed. Taste for seasoning.

A believe the "bits" in the bottom of the roasting pan are called souks, a French word/term. I love them because they have so much favor.

You were my last hope for gravy. Cognac!! Is that how your grandma makes it ? I know I can leave it out ugh.. your still my favorite. But how am I going to stretch that for 21 people. I need a lot of gravy.

If we don't see the 'Turkey' you baked 'Chicken' ;) And if the gravy tastes powdery from using flour, you didn't cook the roux long enough. But I love cornstarch when you want gravy silky and shiny.
I use 1 tbsp of fat to 1 tbsp flour for a roux to which I add liquid.
That boy has chicken on the mind
To get rid of that powdery taste of flour in your gravy, just let come to a simmer for a min or two, thatll get that taste away :)
Always cook flour off so it dont taste floury. Sauce gravy has a lot of flour.

Which brand of cognac do you recommend? Great video by the way
He used Hen Dog. But I think Remy Martin or Martell would be good because it’s really rich & smooth. But if you’re on a budget (cognac can be petty pricey), I think E&J Brandy would be a great choice too.
It's all about the gravy, as far as I'm concerned.
Wonder if he’s single. I mean, I’m straight but I’m not above experimenting for a decent gravy. Lol! Havnt had good pan dripping gravy since my parents were called home! Lol. That looks soooo good though compared to others I’ve seen here on YT.
