The English people call it aubergine. In India, they say Baingan and Italy, its melanzana. I think that in Guyana and Trinidad, it's called the same and cooked the same way. Those plantain chips are really crunchy from the sounds they make during the taste testing. You guys have really mastered this dish. I will take my share with a roti.
