The best pumpkin/squash soup I've ever had! I make it every week! So delicious and beautiful!

- Recipe: 1 medium size Kabocha squash (about 2.7 lbs/ 1200g) Remove the seeds Remove the skin Slice the Kabocha squash (about 1.7 lbs/785g) Slice half of a large onion Chop 3 cloves of garlic Add 2-3 tbsp olive oil into a pan Add the sliced onion and stir Add the garlic when the onion turns soft Stir fry Add 1 tbsp salted butter and stir Add sliced squash and stir for 4-5 minutes at low heat Add a cup of milk into a blender Add the cooked squash Process for 1 minute Pour the squash mixture back into the pan Add 2-3 cups of chicken broth and mix well Bring it to a boil Cook for 6-7 minutes at low heat Drizzle some whipping cream on top Sprinkle some parsley in the center Sprinkle some black pepper Sprinkle some sliced almonds (optional) Ready to serve Delicious
