As of April 2023 our price is $2.03 per lb. live weight. In this case the total cost was $2,689.00. That includes $50 extra for making 50 lbs. of patties. Finished product came out to $4.72 per lb. We charge by live weight, not finished weight because the finish weight is always affected by the customers choice of cuts. For example boneless cuts mean less take home weight than bone-in cuts. Obviously the more bone in cuts you get, the more bone & thus more weight you will be taking home.
That yield is not the true yield. You could even more than double that in terms of calories if you include the offal, blood, skin, marrow and fat trimmings. These are all edible and more nutritious than the meat itself.
You have a point there, when I lived in Africa I realized there were much more edible parts to a cow than most Americans realize, BUT we find that our customers don't usually enjoy beef skin & offal, so we don't include that in the processing unless they request it. Custom butchering means that we try to process the beef how our customers prefer.

I wonder how the food agencies like FAO measure how many calories are really counted when they say only 18% of global calories is from meat.
