- Ahoy! Welcome to "Love Grub Galley”
On todays episode I share with you more cooking underway, with a squally motor sail towards Cairns the seas had finally settled a little, so I set to work making us one of our staples here onboard “Taco Pockets” with only a few basic ingredients you’ll be eating your hearts out in no time.
What I used: Serves x2 humans
1x can of chilli or smokey beans of choice
5x soft tacos
2 Tbsp chopped jalapeños
3/4 Cup grated cheese of choice
Optional - freshly chopped parsley if you have it on hand (I’d run out)
Shape tacos into pockets and place into oven proof dish of choice, I used my trusty cake tin, you could use a muffin tin (way easier) if you have one, then evenly spoonful beans into them, add chopped jalapenos and top with cheese, place in oven at around 200C or 400F for 15-20 mins until crispy and cheese has browned. Remove from oven, I top ours with green salsa…. :)
