Likely he remembered it from some famous literary work. In the books, Holmes was somewhat familiar with popular literature and novels( Both fiction from the likes of Edgar Allen Poe, as well as non-fiction such as Darwin's Origin of Species ) but on this show, it's more likely that he was forced to go through them in his school days and had these facts lodged in memory.

So he has to know about it because so many criminals will do things like hinting their secret activity in the name of their front company...

It's a reference to The Hobbit films, in which Cumberbatch (Sherlock) plays Smaug the dragon, who famously proclaims, "I am fire. I am... _death,"_ at the end of the second movie. "I am on fire," Sherlock's identifying quote in this video, is very similar to "I am fire," the only difference between them being the presence of the word "on." I added that word to the second part of Smaug's proclamation, "I am death," as a joke connecting the show and the movie.
