Just a little hint from an old lady: Insted of using the ladle, if you use a Pyrex measuring cup, it can hang on the side of the pan, not get too hot to handle, and hold enough to fill ones or more jars at a time. It make things easier!
I agree...Pyrex measuring cup is the way to go. I use mine to fill jelly/jam jars also. Saves a lot of dipping time so you can move on to the next project. If y'all are like me, "canning time" is the busiest time of year.
Just finished 7 quarts of chicken feet broth out of the pressure canner. Got 6 pints of raw packed chicken breast jars ready to go in. And to fill up the rest of the canner. I have 10 pints of dry beans that I am canning. Since the meat and the beans both take 75 minutes. I am making chicken stock from the bones that I cut the breast meat from. I also added some celery and green onions. Let that cook in the roaster till tomorrow. Love to can! Been canning for 44 years now. And boy! Am I tired! Lol! 😁
I canned pickled coleslaw today. There is such a feeling of accomplishment when the day is done and I added to my pantry for another day. 9 pints canned. 1 and 1/2 in fridge cause ain't no one canning a single pint. Lol
I’m hoping I have enough green beans to make pickled green beans! I made them one year and they were a hit! I made appetizers by wrapping 2 pickled green beans in deli turkey and rolling it up, then cut in half. Plus, if you pickle them you don’t have to snap them!
Like several other viewers, I have canned in the past but do not anymore. The very first thing I had ever canned was zucchini pickles, when I was a teenager. I have really enjoyed your canning videos. They make me remember the sense of satisfaction (and security) of producing those beautiful jars of homegrown produce. Thanks!
I used to make my own dill and bread & butter pickle brines but, honestly, I like Mrs. Wages mixes of both so much that's all I use nowadays. I like the Kosher dill better than the regular though. I use "Pickle Crisp" in mine and don't do the salting process and they're good and crisp.
I almost got a years worth of green beans, but the Japanese beetles were eating too much. I pulled them up Sunday and replanted. 🙏 for another harvest.

We aren't doing canning anymore (health for one reason) but so enjoy watching how you do it. We have a small garden this year after not having one for years so not a lot to can. I'm only getting enough cucumbers to make dill sunshine pickles. In three days of sunshine and three days in the fridge you have nice crispy yummy dill pickles. This is a quick easy way to use pickles. Also I added an hot pepper in one of the jars. I make fermented veggies too

I'd like your opinion on using 1/2 gallon mason jars for pickling in the water bath canner. It's easier to keep one big jar in the fridge for nibbling than several . Your finished product pickles look 😃
If you’re just putting them straight into the fridge I’d suggest doing refrigerator pickles instead of canning pickles. Canning allows the food to be kept at room temperature
Check out the Amish water bath canner. You can double stack pints in it. It holds 20 pints on the first layer. I use mine when I am doing big batches. It sits on two burners. It is a game changer.

I’m wanting to try that but so far I’ve never grown beans. Newby. Only two years gardening. So far I’ve done 33 tomato plants each year and 33 pepper plants. This yr I added garlic and onions. Also added four GreenStalks with nothing but herbs and one GreenStalk with nothing but pepper plants.

Oh my goodness I had a good crop of many hot peppers of a mix grow so this year I made Candied Pepper's. If I knew they were going to be this good I would of been doing it every year. Now I'm hunting everyone garden for peppers they no longer want to get another batch made. My husband blows threw a jar in three days. On his sandwich for work and on top of crackers and cheese. Darn him and the kids what. I take all seed's out I need my seeds.

If you want an amazing spicy, flavorful pickle that's not very hot, put some banana peppers and one jalapeno with your cucumbers. It's AMAZING! Not burning hot either. Just a little spicy and the pickles take on the flavor of the banana peppers and a little heat from the jalapeno.

I am just getting back into canning living in a smaller town, no farmers market. Oh and my garden totally bit the dust! I have been buying extra veggies when I can but that is 6 pints each. Do you know you can use your pressure canner as a steam canner? Add a little extra water than normal, start timing when it starts to steadily vent and do not use the weight, just let it keep steaming, way less water usage
I water bathed pickles today for my first time. After I was done I noticed a bit of the inside liquid came out of the jars but the fill line was still half inch from the top and the lids sealed well. Do you think they will be ok?
I like old fashioned sour dill pickles, and kosher just doesn't taste right to me. Since I have to watch my sodium, I can't eat pickles too often, so I am grateful our Walmart started carrying while dills(not kosher). Thankfully, they can stay in the fridge for a while lol
I LOVE kosher dill pickels. but last year I had to do chemo and radiation for cancer (might have to do it again since my cancer is back) NOW, my husband's dial soap he uses in the shower smells like pickels and it grosses me out. but only when he is using it in the shower. weird....
Such a simple way to preserve fresh green beans and cucumbers. I made a pint last night, simple method, salt, bay leaves for crunch and spices. I buy a bag of organic mini cucumbers so always have pickles the way this granny likes them. Reading the ingredients on the back of jars of pickles at the store, disgusting. Polysorbate 80 is spermicide.
Lemon juice has a higher acidity level than 5% vinegar which is why you can replace vinegar with it (but never replace lemon juice with vinegar) in a tested recipe. So yes it would be safe to do, taste wise no clue how that would turn out. Note that you can use any 5% vinegar (red wine, white wine, balsamic, etc) if it is the distilled vinegar that is not to your liking. Would be interested in results if you try with lemon juice.

I have a very large stock pot as my waterbath canner and I use the trivets from my presto canner so I can stack the jars in layers

Make and can Pepper squash relish, lots of different relishes call for yellow squash!

Isn't it 1/2 tsp. Salt to a pint of green beans and 1 tsp. For quarts? That's what the blue ball canning book says anyway.
