Bruschetta on thinly sliced Italian bread, lightly toasted, YUM! Italian American family so this is a staplevfor family get togethers, holidays, etc. I never thought about canning it but will check it out.
I've recently started using a steam canner (cost ~$80 at a famous on-line store). With only 3 qts of water to heat, it is much quicker AND more economical on water AND fuel (gas or electricity) to heat up. Processing times are the same as a regular water-bath canner once the correct steam temperature for your elevation is reached and the gauge in the lid registers "in the green zone". Effective lid seal rate seems to be identical to regular water-bath canning. Definitely worth considering.
I love mine and have been using it since the 70’s. They have been around awhile and I always pick them up at yard sales for a couple bucks to share with friends.

Although this chicken house is now gone and my Dad no longer farms, they have a few small yard flocks and goats and they have always had a garden. I’ve had a big garden for the past few years and it has become the place where I find peace and I regroup. I so thankful I found you through Jess’ channel! You are genuine, real people. Our tomatoes are just coming on as are our peppers. I'm happy to have found another ky farm. We have pigs, chickens and soon to come nigerian dwarf dairy goats😄 my husband kept saying no but i finally convinced him i told him they would be my anniversary and Christmas gift from him, now i just gotta convince him that we need guineas lol. We live in north east ky. I've been hearing about those meat chicks we haven't tried them yet but defiantly next time, we raised a dual purpose breed this time around (buff orpingtons) and kept back a rooster and a few hens for eggs. The pepper tasting was hilarious, i love HOT hot peppers so much so i just did the tube of doom peanut challenge, its peanuts covered in reaper dust (i passed). Thanks for the video. I use a very similar recipe that I created based on canning our roasted red peppers. Instead of peppers, we roast Jersey Devil tomatoes. After grilling the tomatoes, we slice them in half, and pack them into jars. They are a far superior heirloom tomato that is extremely meaty; holding it's shape even after being on the grill for extended periods of time. These tomatoes are a challenge to grow organically. They require nearly weekly shots of calcium through our drip irrigation to prevent blossom end rot, and also bi-weekly treatments during mid summer for late-blight. AND of course, de-suckering for massive productivity. They are worth the effort, because they produce a bounty of fruits and make great sauces, but one of their best products are the marinated/wine tomatoes for winter. They seem to retain that "fresh tomato from the garden" flavor too.

Jen and Zach, some of my favorite things to can with tomatoes are Taco Sauce, Rotel/Fautel tomatoes, Sloppy joe starter are some of my top go to canning tomato projects. I find I go through quite a lot of Fauxtel tomatoes, as well as taco sauce and sloppy joe starter.

As I was watching this video... I was recreating my onion relish recipe. I originally I couldn't find recipes for Onion Relish, in the early 1990s... so made my own. I can't find my box of recipes. (Somewhere in all my moves and the final move to New Mexico...) I will add some Roasted Hatch Green Chili's next time... August/Sept. is Chili Roasting season here in NM. Steam canning is an approved method for canning up waterbath recipes, and the steam canner takes much less time to heat up! You should get one!

I LOVE my steam canner! As soon as I used it the first time, I knew I'd never go back to the regular water bath canner, so I gave it away.

Yesterday before church I canned up 9 jars of cucumber sweet relish made from my lemon cucumbers, and 12 jars of FAUXTEL tomatoes. Every bit counts.
