This is a delicious snack so thank you for posting. I've made this before so, it helps achieve perfection if you simmer the honey and sugar for about 5 minutes, not just melt it. Mix in with sesame seeds - you can add in roasted pumpkin seeds, walnuts, almonds, a pinch of salt and some orange zest too. Just make the ration about 2/1/4 c. seeds/nuts to 1 sweetened (crisper if 1/2 c. sugar and 1/2 c. honey (a thin coating of oil in your measuring cup = honey pours out completely and easily). Also, don't use wax paper with a hot mixture; paint a few drops of oil (or use that spray kind) onto parchment paper then roll out with a rolling pin.
They are very easy to make, you can dip them in chocolate or peanut butter, or add some chopped almonds or pistachios, or whatever you like so you can make them your own. Also, thanks for watching.
When I was a child I used to love to go to the health food store and that's what it was a health food store. You could buy these in a bag they were small a little thick and wrapped individually. Now I make them and I just love them and they are healthy with all that good sesame oil from the seeds. Sometimes I will dry fruit in my oven like strawberries or other times I will get freeze dried fruit and put it on top. I also like to make equal amounts of sesame seeds and roasted peanuts and that's good too. I use honey because right now I can't find brown rice syrup and I would like brown rice syrup better because of the malty flavor.

I don't use refined sugars as I'm diabetic. Honey is on the line but maple syrup coconut sugar which is very caramel like and brown rice syrup. None of these Spike blood sugar like refined sugar does. Also dates date syrup and date Sugar are diabetic friendly. It's like making peanut brittle you cannot get it all spread out before it's hardened!
Don't use molasses if you're using "Dark" brown sugar (or light for that matter) because dark brown sugar has molasses in it already so does light but not as much that's the difference between light brown sugar and dark brown sugar is the dark is much richer because it has more molasses in it so either way you do not need it because they both already contain it except dark contains way more and can completely take over the sweetness to a level that can just be nauseating it gets so sweet and then adding molasses to it even more?
