- This is called 'risi e tochi' or chicken and rice and it's from the Veneto. Risotto has a reputation being tricky to make with lots of rules; this recipe is relaxed and a crowd-pleaser. (In fact, it's so good, I'm putting the recipe in book 2.) We visited La Fagiana, run by Carla, Eugenio and son Michele. And if you are ever in the area, do go and visit.
OK folks. Couldn’t wait for the official recipe. Made it using my best judgement and the video. It was ABSOLUTELY AMAZING. This is another Pasta Grannies triumph! Thank you La Fagiana. It was fantastic to get to watch you and learn about your recipe! So delicious!
not gonna lie, came for the risotto, stayed for Michele...
Michele is cute and adorable. I wish he were gay. Anyone has his instagram?
@@Billy-dj8zw Control yourself please 😂
Agreed lol
🤭🤭🤭
Thank god. I thought i was the only one…😅😂
Never seen the combination of rice and chicken in Italy and I'm nearly 50 yo. Now I learnt another recipe. Veneto region is fantastic.
By the way, how to confuse Americans, Italy is one of the first rice producers of Europe. We are not only the home country of pasta. 🌾🌾🌾🌾🌾🌾🌾🇮🇹🇮🇹🇮🇹🇮🇹🇮🇹🍲🍲🍲🍲
I love how generous they were with the wine. 😁
this was a very informative video, and the recipe really looks delicious 😋
Wonderful family,she makes great risotto.
Che bello to see a family working all together😊. My mamma used to cook rice in red wine too. A family heirloom i guess. Beautiful video, wonderful recipe, lovely family and amazing scenary👏👏👏👏. Thank you pasta grannies😊🖐
Gorgeous woman cooking a wonderful rustic dish. The produce looked like it was the finest quality. It all looked delicious.
Greetings from downunder x
Posh food today with chicken, looks yummy.
OK. Sorry. Had to post yet another post. I have now made this 4 times. Each time, I just “eye” everything and everyone LOVES it. The secret is to cover the chicken 1/2 and let it simmer for at least two hours. (It should be falling off the bone). Then Just make Risotto the way she shows you. I have been making it for years and her instructions are perfect. Trust me. Make this and your friends and family will be AMAZED! Thanks so much for this video!
Their farm is beautiful!
Beatiful accent signora Carla!! And your risi e tochi is a masterpiece!!
That's the accent of Veneto Region (North East of italy), it's very musical, I love it. To me it's one of the most beautiful accent in Italy.
Such a beautiful family.
Ms.Vicky, very nice recipe, I saw Lidia Bistanich make this on a food network, she used aborio rice I think, she stirred the rice constantly for 18-20minutes adding the stock a ladle at a time as the rice absorbed it, wow, labor intensive, this pasta Grannies is great, very nice, God bless everyone
hi Steve, arborio is a good risotto rice which needs attention because it can overcook quite quickly. Carnaroli on the other hand is more tolerant and a good variety to choose if you are just a beginner with risotto making. 🙂🌺 best wishes, Vicky
Guess I'm moving to Italy asap
Great episode! I enjoyed learning about the rice.
hi Mark, I am glad you enjoyed it! best wishes, Vicky
Carla is amazing. I looooove risotto. And dare say I am good at making it. I would love to try her rice. ❤️❤️🌹
My grandmother from Treviso made the best chicken giblet risotto ever… Of course she did the cooking so she got the neck bone =8-)
i speak Spanish and its interesting how sometimes i dont even the subtitles. Food looks so good!
Pasta Granny mentality if I've ever seen it with the measurement of "two handfuls per person!" My Nonna used to measure like this, it makes recreating her beloved recipes impossible!
Looks delicious 😋, my family will definitely love this dish. My mom makes a chicken and rice dish, but with white wine, free range chicken or home grown definitely tastes better 😋. Now I need to track down some of their rice.😁
Looks absolutely delicious!
That looks so good 😍
this reminded me my university days - cooking rice in chicken broth with chicken would keep me fed for the whole week and was cheap too. Of course i did not use wine and rice was a value range :) Still very delicious!
Lovely
So yummy, and I’m not just talking about the risotto...
The young man Michele could have been carved in marble and put among ancient Italian-roman statues!
Beautiful 👏🏻👏🏻
Meravigliosa!
Grazie x la bella ricetta
This so delicious. I like to use the chicken bones to make a broth once the chicken is shredded to then use for the rice instead of water.
hi Johnny, I do something similar - make broth from roast chicken bones, use this, the leftover meat, and a few toms to make a risotto; the key is the rosemary, I think. best wishes, Vicky
Wonderful, delicious recipe, please do you know if there is a video or recipe for strawberry 🍓 risotto 😍 ThankYou 💚💚💚🇮🇪🍀
Michele is gorgeous, he can take me on a tour of anything he'd like.
I would be happy watching him bathe.
Near that farm there is one of the handful of italian authorized naturist beaches. We can ask him to go for a dip
He is perfect......I love him.
Yes, finally a gluten free pasta grannies recipe. Is there any chance that there is a celiac pasta grannie out there who wants to share a recipe for homemade pasta 😅
So far, we've never come across a celiac Pasta Granny. I think because non-gluten pasta recipes are a very recent development. I always recommend my friend Katie Caldesi's recipe www.caldesi.com/gloriously-gluten-free/ best wishes, Vicky
@@pastagrannies thank you very much! :)
My Italian grandma is celiac! She uses rice flour or potato starch to make pasta 😊
Brilliant woman
This is quality content
Now I'm more at ease with making chicken risotto. It's one of my favorites but I thought it was not a real thing you know 😆
Ma che bontà! 😍😍😍😍
Looks delicious Thank You 😊
The young man ( Michele) is extremely cute.
He's delicious like the rissoto!😋
@@campari4467 I think I'm in love.
I simply love these videos. Where can I get the cookbooks? I'd love to try and make these recipes at home

I wish that you'd highlight the English translation. Would be easier to read. Thanks ☺️
Tochi in dialect mens pezzi, pieces: toco, singular, tochi, plural. Un toco de pan, a piece of bread......Due tochi de pan, two pieces of bread......
Yuuum
Kudos on a risotto!
Beautiful 🥰, when is the second book coming out please?
Next September, if all goes according to plan! best wishes, Vicky
My god the son!!!!! :P
Michele
😍
Looks so yummy! I wonder why he smacks the bowl bottom after he dishes it up. 🤔
His intent is to level the surface of the risotto to make it more appetizing. I never do that, but my husband cannot eat risotto unless it's flattened.
Michele
Remember a Brazilian dish called galinha 🐔
Actually, it is GALINHADA
puo andare!!!! Nice husband
Many husbands don't waste many compliments…..”può andare” ……. It's enough ! 😉😀
Please use black lettering for subtitles, white is too hard to read.
hi Doreen, we'll take a look at this again. best wishes, Vicky
Is Michele single or...? Asking for a friend or course
His friend is me.
He is mine, forgetaboutit
Get in line yall!
1:32 he's a tasty point of view 😏
No quiere ser mi abuelita ?
So many down bad comments about the son in this video, you people thirsty lol
Who else is here because of AL from Boston? 😂
I think Vicky is cheating. I don't think this lady is a grannie yet.
True; the Nonna we were going to film cancelled but I think Carla and her family are lovely anyway 🙂🌺 best wishes, Vicky
Michele.
*faints in Italian*
Are you sure she was using water and not broth?
It`s water
the liquid she used from the pot on the electric burner to add to the rice is hot water. The right way to add more liquid when cooking something. Never cold or tap water. I always keep the electric kettle on for more hot/warm water. I don't think stock is necessary with the red wine/tomatoes/red sauce ....
@@souadghazal2533 thanks :)
hi Peter and Souad, I once made this dish using stock not water thinking it would be even nicer, and it was too much of a good thing. As Souad says, there is already enough flavour in the sauce. best wishes, Vicky
@@pastagrannies Hello Vicky. Re-watching some of the older videos, noticed a few of the nonnas wearing the same cream color/red checkered apron with their names embroidered on the front ... is it just a coincidence/popular design or are they a gift from you ? Asking for a curious friend :)
Bravi assaggiate lo solo voi tre!!! Visto che lei cià rimesso di nuovo la forchetta dentro dopo che là assaggiata!!!😂😂🤣😂.
I love the story of risotto being a combination of riso and otto. I will always stir the rice in a figure eight from now on!
It's a useful tip. Although risotto is far more likely just the word for rice, 'riso', plus the standard suffix 'otto', for 'plump' or 'substantial'. For example, from pane (bread): panino = sandwich bun, pagnotta = bread loaf.
Looks absolutely delicious!!
Doesn't he just
Great video. And the son was a plus to this video.
I can't believe i' m seeing la fagiana on pasta grannies!!! I live close by and eat their rice all the time ( amazing amazing quality)!! Wow what a great surprise!
Ma loro il loro riso lo vendono solo nella loro zona ?
@@aris1956 non saprei! Io abito a pochi km di distanza, lo prendo o direttamente in azienda o in piccole rivendite di zona!
Lucky you! best wishes, Vicky
Wow this looks luscious creamy and delicious :) rice from the fields?? That's amazing
Yeah right! You were checking out the son!
I think I have a crush on Michele
I love Michele, I am totally smitten.
Michele, you and tour family are our pride! You are promoting our territory with love and passion, thanks.
Your farm is very beautiful and typical, in the nature...marvelous to see on byke !👏
I love all types of risotto , I’m definitely going to try this
I can see this episode being about Carlo gorgeous son and not mums delicious dish.🤣🤣🤣🤣🤣🥰😍🤩🤪
Thank you for the blessing of Pasta Grannies. This show brings me joy, peace, and occasionally, tears. My husband and daughters now sit and join me 🥰
How lovely to hear watching Pasta Grannies is a family event 🙂🌺 best wishes, Vicky
Vicky, you had me at "adds a generous amount of red wine". Beautiful family, recipe, and scenery. This is not a tiny little operation. Unlike North America, we always see these families that work together, live in harmony, and seem to love each other. We all need a little more Italy in this world. Thank you Vicky and the Pasta Grannies team for continuing to excel at everything you do. I wish these episodes were one hour long.
hi Greg, I'm pleased you enjoyed the episode. 2022 is the year I try and make happen a tv series. Once I've finished the book and got 6 months of UA-cam Friday videos organised, that is! 😅 best wishes, Vicky
@@pastagrannies All of us loyal and appreciative viewers wish for continued great success to keep coming your way. You and all the grannies (plus a few gramps) are gems of this world.
thank you Marilyn 🙂🌺 best wishes, Vicky
Beautiful farms seem to be in Italy & risotto dish!
Great recipe!! I can’t watch more than one episode because I need to go and raid the fridge!! 😂😂😂😂
Hi! I absolutely love this channel! One request, though - can you make more contrast for the subtitles? Like thicker black around the white? Otherwise this is utter perfection.
hi Alisa, thanks for your feedback; we recently put a shadow on the white font, and I'll chat to my editors to see if we can make it thicker. best wishes, Vicky
Loovvee risotto it looks soooooo delicious, well i have to try a chicken risotto soon, i have only made it 1 time my self befor and it was perfect cooked with mushrooms in it, but with chicken sounds even better
Michele is very handsome.
My mouth is watering.
Absolutely wonderful! Chicken risotto is a "trash" dish in USA. In Italy is instead a masterpiece
Every dish in Italy is a masterpiece!
whose says it's trash?
@@seethoj12 indeed - we eat a lot more chicken than Italians so you'd be hard pressed to find an American calling chicken and rice "trash" food. Hispanics in particular make similar dishes that have become popular outside of their culture, like the famous Cuban arroz con pollo. In all the times I've dined with my relatives in Italy, they have never offered chicken. I only saw it in those little take-out places called rosticcerie, so it would seem that they consider chicken to be pretty humble food that suffices for a fast meal at home.
However, I will be the first to say that Italians make a masterpiece of any food, humble or not!
These pseudo-etymologies, they make my ears bleed... BUT what a great video, great stories, lovely family, and another great dish! Thank you... and happy 2022 with more kitchen wonders
I always forget risotto is just rice, some wine, water and cheese. Why do I always buy those risotto packets?!
Strawberry risotto is a taste sensation.
Delicious!!!! I always find it so difficult to make proper risotto. It must be served right away. This was a very good “tutorial”. Lovely family.
Uma verdadeira aula sobre fazer risoto. Obrigada.
She is a grandmother??
I live in India. What kind of rice should I use to make rissoto?
I am not familiar with Indian rice varieties apart from basmati, which is not suitable. You want a rice with a high starch content that doesn't turn to mush when cooked for 18 minutes or so. I did a quick google and noticed comments which say you can buy arborio in the major supermarkets in India these days. I am sorry I cannot be more helpful. best wishes, Vicky
Great vid, thanks
Lovely, & thankfully a far cry from the "risotto" I was introduced to as a child. It was baked rice, usually with peas, onions & cubed spam for some reason. Not saucy at all & drowned in Lea & Perrins. 😆 I really don't know why it was called risotto... but hey it was the 70's.
Do love making a proper risotto though, there's a Zen like catharsis about constantly stirring that infinity symbol ∞ into the rice & slowly adding stock. The day's worries evaporate with the steam. Especially good at this time of year if I've been foraging for ceps/penny buns or other wild mushrooms to add to it.
Was interesting that they didn't gently fry the rice at the start of the making, I was taught that way. But I suppose if they're leaving part of fibre on the rice it'll give the "nutty" flavour instead?
I had a wry smile to myself when the son said he'd even used rose petals to make a risotto before... he's obviously a hit with the ladies! 😄
Lovely family & they live in a stunning setting. So flat, but I suppose it needs to be to flood the fields.
Brilliant video, a wee change up from the usual, but just as welcome as risotto is a strong favourite with me. Thank you.
Add chorizo to that and you get British paella.
ooh crikey, I was spared that horror! A uniquely British take on risotto and maybe 'Chinese' fried rice... yes it was interesting to see they weren't bothered about frying the rice. I think there must be several homey rice dishes where the 'rules' aren't followed too closely. Also Carnaroli is bomb proof in my experience. 🙂 best wishes, Vicky
There was a lot of questionable food served to us as kids in the 70’s, but it wouldn’t cross our minds to object or it would be waiting for us for breakfast after being sent to bed without dessert, if there was any, because treats weren’t an every day occurrence. I like making risotto Milanese myself but I confess I’ve graduated to using my Instant Pot.
@@mjrussell414 Suppose when you think on it rationing didn't completely end until 1954, so old habits were ingrained into our parents. I've said talking here before how something like a chicken wasn't a regular occurrence & would last a family of four for at least three meals, more if you include the stock from the carcass. Still think it was pretty healthy for us all though. Through simple filling food [mainly soup at least twice a day] we didn't go hungry.
Yeah, we just didn't get to leave the table in our house, and a smack round the head wasn't out of the question either 😆. Still never got used to Brussels sprouts though. I still keep trying them & Nope!
I felt bad making a risotto in the instant pot at first... & expected it to be awful. But it was actually pretty good & a good cheat if you have other things needing doing.
Hi Marilyn and James, I don't think I've ever seen an instant pot in an Italian kitchen; Bimbi yes, very occasionally 😀
Looks so delicious!!
Didn't they give u any
hi David - of course! It's a great risotto which I now cook regularly. 🙂best wishes, Vicky
Great video, but I have to say that I am a little disappointed by the fact that this one seems to be a bit commercialised in its production.... Respectfully, please, keep the format as you originally intended, getting into grannies and mamas kitchens and filming their true home cooking as it was taught to them by their elders....there's plenty of fancy pots and induction cookers and producers of organic food advertising their unique products, all over YT...thank you.
I'm sorry you didn't enjoy this video - you'll see it has a 'diary' banner as I like to film small agricultural producers occasionally, and we try and link it to a grandmother then using the ingredient (see Samuele the cheese maker from a few weeks ago). On this occasion, the signora cancelled but I like the family love in this video. 🙂🌺 best wishes, Vicky
I respectfully disagree, these producers need all the help they can get.
@@zingaradigiorno7775 They face very tough competition from large producers.....we should support Michele and his family.
