I use cottage cheese too. My hubby thinks Ricotta has too much of a bite to it, so I use cottage cheese in my lasagna. My Home Ec teacher was Italian and she taught us to use cottage cheese when teaching class. So, for me, it works. She also taught us to use about a tablespoon of olive oil to the freshly cooked and drained noodles to keep them from sticking together.
I always add extra garlic, oregano, fennel and a splash or 2 of olive oil to jar spaghetti sauce. A little sugar added to sauce helps to cut the acid in tomatoes. Thank you for sharing the recipe. Looks great 👍
Sugar in any tomato sauce kills some of the acids in the tomato. It actually good if you have any kind of stomach acid problems. Or that is what I have been taught through out the years.
What a great and different way for spaghetti. I actually put cottage cheese, sour cream and sharp cheddar cheese in my baked Mac n cheese and it is divine! I'm definitely trying this recipe. Tfs! ❤
Hi Leslie...when making anything with tomatoes I also put just a little sugar to cut the acid and I always use cottage cheese instead of ricotta cheese in my lasagna. Hi Leslie!!! There's a trick my mom does to mellow out tomato sauce without using sugar. She uses a tiny pinch of baking soda in the sauce...very tiny pinch. It works beautifully to tone down acid and bring out the sweetness of the tomatoes.
This looks so good. I will be trying this week. For those who need gluten free, I could see using the spiral zucchini. Also subbing chopped mushrooms for the meat.
I have used gluten free noodles and subbed ground turkey for the hamburger and it is delicious! Adding mushrooms to the sauce would be tasty too. My son-in-law uses spaghetti squash with his meat sauce and enjoys it that way.

We as a society already eat too much sugar without sneaking extra in dishes that don’t need it!I would love to hear medical opinion on your theory that sugar cuts acidity in dishes with tomato.If you just have to have a sweeter flavor, sprinkle a bit of sugar substitute in. There is no bitter aftertaste like the old days and your teeth and waistline will appreciate it!

But I too like a little sweetness at times to mine. But again… it’s only got taste & preference. My poor papaw sprinkled a dab of sugar on just about everything he ate. My mother in law makes this and calls it "string pie" . It is indeed yummy. I have made similar with strips of zucchini in place of the pasta for a little more lighter carb option.
Hi Leslie, Sugar cuts the acid from the tomato sauce and tomato. Also for those that can't eat red tomato. My Dad had too eat yellow tomato. That wouldn't cause heart burn. In those days Mom didn't know about adding sugar too a Red Tomato dish.

I have always called this Hungry Man Casserole and I like using egg noodles instead of spaghetti. Oh and in a pinch, I have topped it with velveeta, it is really tasty that way too.

You can freeze the garlic. Get small ice cube trays, spray it with some oil, and put whatever amount you use most often in each cavity. Once Frozen, pop them out and store in a freezer bag. You may have to double bag it, if you can smell the garlic in your freezer.
For sweetness, chop some carrots and add them to the sauce. I'm Italian, so using cottage cheese is anathema. This is basically lasagna made with spaghetti, so I would just make actual cheese filling for lasagna for this. The dish you made looks delicious! I agree with a commenter below that angel hair pasta might be easier to work with.
We always made this and just basically three layers you miss mixed the sauce with your spaghetti put half of that on the bottom put all your cheese in the middle and put spaghetti on top of it and then put your cheese on the top. It makes it a little faster and I think it makes it a little yummier too because you've got the sauce and the meat all mixed in from the beginning..

Looks absolutely yummy! Suggestion…last 10-15 minutes, THEN add the cheese. Those with an “iffy” oven, you won’t burn the cheese by putting it on the casserole for the whole baking process. Gonna try this real soon!
I do layer of sauce in between pasta & cheese instead of only sauce on the top layer. That way sauce little bit even distributed throughout IMO.🍝

A little bit of butter does the same thing for the sauce as the sugar . Cuts the bitter

Check the ingredients on the jar of spaghetti sauce you used -- it could have sugar or corn syrup added. Most prepared sauces do.

Suggestion…share the garlic with your daughter and/or divide it up into small freezer bags/containers and freeze it.

When u rinse with cold water it removes the starch making it hard for sauce to stick to pasta .
