"In the lobby of a small hotel in New Jersey," named the Spring Lake Hotel. Khigh Dhiegh was born in Spring Lake, New Jersey. Note the "water waves" in the pitcher and glass starting at 2:10; you're correct, the entire set was physically rotated, and that stopped when the camera locked onto the lecture then pulled back. At 4:18 we see the supremely mysterious Reggie Nalder. The punchline? Seek, find and read the source novel by Richard Condon; for that matter, look up Andrew Salter.
Not sure. One seems to show a US POW dancing with a Chinese or Korean woman (the cooperative behaviour of some Western POWs with their captors in the Korean War gave rise to the whole brainwashing controversy). Others might be scientists connected with psychology and behaviour modification. The face of an Oriental peasant or soldier might be there as a test of how good the brainwashing is working - it is not a picture you might expect to see in a hotel lobby in New Jersey, any more than the red star and the portraits of Stalin and Mao.
In the novel he orders books rather compulsively - there is a suggestion it is a sign of his emotional disturbance following his experiences in Korea (and unknown to him, Manchuria).
