He cared about his cause enough to sacrifice his own life to take out Melisandre. Only it didn't quite work out that way, as we saw...
Melisandre you could say has an immunity to poison which is why she drank the drink even knowing what it was poisoned. Thanks to the Lord of Light, she has some magical abilities. So a "witch" isn't too far off

Meistre Cressen was willing to die if that meant Melisandre dying too. So he drank the poison hoping she wouldn't suspect, but she's a Red Priest and her God protected her from the poison effects. The blood coming out from Cressen's mouth is because of the poison.
the thing is.. the way it was done in tv show was kinda stupid, because in books Maester Cressen drank form the challice as a second, from what little was left at the bottom.. because Melisandre knew it was poisoned, she just wanted to f*ck the old man and let him die. and Cressen knew that he's lost. if he didn't drink, he'd die anyway as if he killed her. on the other hand, here he drank first, revealing it's poisoned and if Melisandre couldn't survive, she'd simply not drink as she's seen the blood from his nose
