Because if it isn't removed, the hinges can be ripped from their moorings in certain sudden starts, stops or shifts in forward momentum. It is a full precaution. Anything less is not.
Lol full precaution? You mean waste of time? Only way your ripping the hinges from the piano is if your clueless moving it this actually makes it 1000 times more likely to be damaged
They ship the damn piano from the factory with the top attached 😂
Love their attention to detail but three men moving a baby grand?
2 people lifting 200 kg = awkward
They did a great job of packing the piano for moving. But did not show PREPARING the piano for the move. Like blocking the key action... hope they are not all stacked on one end when its unpacked!! Happened to us when a "we move pianos all the time" national moving company moved our Baldwin R! Piano tech came out and saved the day. Mover lost a nice fat contract with our company for over a hundred moves a year! Bozo!
Without the technical details i can't agree or disagree with your dilemma. I know most grands have "dog blocks" built in, to hold the action in place during a move, as well as a "key stop rail" that extends across all the keys for the same purpose

The movers were oxygen starved resulting in depletion of thinking fundamentals.
But healthy. Most customers demanded mask during covid, especially in New York.
