That cool bridge type is called a "Bascule Bridge" ... quite a number of them on North American Railroads, many still operating., though the one you saw is not.
Buffalo native here. Glad I found this video. Real cool. Yeah, Lakeshore Limited is a great train but they need to bring back full traditional dining service though. The vacation package is managed by Amtrak Vacations, which is not owned/operated by Amtrak but contracts with them. It's a great deal sometimes. From Niagara Falls to NYC, we have 4 trains daily going east and west and add the LSL trip too. I see you were placed in the older sleeper car so next time ask for the new one because it's fresher and more cleaner. Try bedroom next time, the size is 2X bigger and it has private bathroom/shower inside. The diner car you went in is the new one and it's a big improvement. At least you both had fun and enjoy the trip though. If you need any help for future trips to NY State, give me holla and I'll be glad to hook you up. Also I own a website you can check for future references: amtraktimetable.com and it has all information you need for future trips. Also, the better easy to use Amtrak tracker can be found at transitdocs.com. Enjoy!
This is all awesome information. Sorry that I didn’t see it right away. We’ve been super busy with home remodeling projects. We’d love to go on another train trip! (And obviously we’re new at train travel and could use all the help!) we have two dogs (each weighing around 35 lbs) is there any way to travel with them on a train? I saw a lot of trains have a maximum weight limit of 30 lbs for dogs.

We did an Uber or a taxi the whole way to Niagara.
