- Lazy Weeknight LOADED Mac N Cheese for 2 (One-Pot)
I have three problems with mac n cheese. One: Mac n cheese is a comfort food, so, naturally, it doesn’t care about your macros. Traditionally full of fat, low in protein and high in carbs, in my diet it’s been limited to a rare-occasion side dish. Problem number two is that quick mac n cheese usually comes in a box. And with that box comes not-so-healthy additives that I routinely avoid. Third, a lot of homemade macs just aren’t creamy enough to satisfy the craving that box mac satisfies so well. This loaded mac n cheese recipe solves all three of these problems in just 12 minutes.

⚪FULL RECIPE⚪
~ INGREDIENTS ~
- 168g macaroni of choice
- 340g (12oz) cooked chicken breast
- 325g (1 ½ c) water
- 110g (½ c) evaporated milk
- 80g white cheddar or other cheese
- 2 c frozen broccoli
- (handful of dried mushrooms)
- (dijon mustard)
- salt (to taste)
- onion powder (to taste)
~ INSTRUCTIONS ~
- Add everything but the meat and cheese to a pot
- Set on high heat for 12 minutes
- Stir periodically to prevent sticking
- After 12 minutes, turn off heat and stir in meat and cheese
- Serve

I've been making this (minus the mushrooms, I have a long haired cat so I can't dehydrate them in open air like that, I use Trader Joe's mushroom seasoning instead) a couple times now and I'm obsessed with it. Thank you for this, I look forward to new vids!

I dries the mushrooms in the oven, laid onto baking sheets then put in the oven at 65 celsius for around 6-7 hours (until they are dry), every hour flip them over and pat down, turned out great

What if… what if I used condensed milk instead😟
Good question. Condensed milk doesn’t contain any emulsifiers like the disodium phosphate that evaporated milk has. Also, condensed milk is sweetened (I don’t know of any that isn’t), so that might be a little weird in mac n cheese.
Alternatives for a creamy sauce: American cheese (minimum 50% of the dish’s total cheese amount), homemade sodium citrate (look that up, it’s pretty cool), and even egg yolk (like a carbonara).

Organic mushrooms have nothing to do with pesticides.

@@ethanpaff That is a list of insecticides. Some of them listed are used in organic mushroom farming.
Insecticides, herbicides, and rodenticides are all categories of pesticide. The idea is to limit pesticide exposure as much as possible. Organic may still get pesticide exposure, but (hopefully) less than conventional. That’s the idea, anyway.

@@ethanpaff Yes, I never said it wasn't a pesticide, you just posted a link to approved insecticides. Which, again isn't the main reason for the classification of organic vs conventional. The main thing that classifies organic mushrooms vs conventional is the growing substrate and the nitrogen source (synthetic urea vs chicken fertilizer). Both organic and conventional get some sort of pesticide on them at some point in the production.

Hey I know technically the pasta itself is indeed 12 minutes, but it's kind of misleading when the chicken takes longer than that to cook and prep before tossing it into the pasta
That’s a fair point. You could always sub with a ready-to-eat alternative, like canned tuna.
