Unfortunately, ours is several decades old! It's probably been here since the initial days of the Conservation Dept, which began in the late 80s. Sorry!
A few nerdy questions...when you remove some of the paste from the jar 2.55 did you drain the water layer off first? Also how do you drain water off - are you using a syringe each time you change the water layer and finally how long does this made up paste last? Many thanks
Great questions! No, we keep the water in there when we are just taking a lump of paste out to strain. No, we actually just pour off the water that is sitting on top and replace it with new filtered water once a week or so. Every once in a while we might rinse the paste with filter water (pouring in water, pouring it out, pouring more in) if we feel the paste needs some freshening up. In general, if the water is changed out at least once a week, the paste is always covered in filtered water and always kept in the refrigerator, then it generally can last about 2 months...though we usually use it up before then.
I have a newfound respect for you preservationists!
Thank you, we love hearing that!
Where would I find a cook & stir machine? I’ve looked on the internet and nothing like what you have comes up. 🦋

Is wheat starch paste cationic?
