I'm new to pickling. I had assumed that it would have a lot longer shelf life. I thought that was one of the reasons for pickling. Or maybe you mean once opened it lasts a week? Good vid! Keep them coming!
The shelf life is a lot longer than a week. You are preserving it in a strong acid. As long as you make sure to sanitize your jar/lid it will last for a long time.
I’m making this recipe using leeks, jalapeños, carrots and a few diced tomato with a hint of sugar for the sweet and savory element. Chef Tom you’re the best, excellent content and every demo/recipe is bullet proof! Keep in the great work😋

I definitely will need to try the pre soak. I really don't see how it'll do anything but we shall see!
It eliminates that harsh gassy smell/taste you sometimes get. Also softens them a bit and makes easier to pack in jars. You can slice a lil thicker when you soak em for a lil bit. If I use a really big onion i"ll soak em for 10-15 minutes. Throw a piece of the red skin in jar for color or a small slice of beet. Try some Lime juice and Lil Agave as well.
Cumin and some jalapeno rings are great too.

Probably a good idea to let the jar come to room temp before sticking in a fridge as well.

You need to can them.
Pickling does not mean long term storage. Canning does

Not sure to be honest. They are being on the safe side. I've picked and not canned and they've been in the fridge for a couple months. Proper canning you can keep them there for a very long tine
They're probably safe to eat for a couple of months but the brine is gonna get cloudy and gross after a couple of weeks.
A jar never last more than a week for me usually. Delicious with just about anything

So many ways to make pickled onions especially with seasonings you can add the pickle my grandpa used to pickle pearl onions in malt but I forget what else he added to the pickle lol wed just eat them out of a bowl with some cheese

Absolutely! But you gotta try malt vinegar!
What other herbs or veggies would you suggest to add. I would like to try to mixt it with another herb or veggie.
I add half or whole jalapeno to the jar. Maybe a garlic clove. If your doing a lot try a bit of basil for a Italian flavor even a few peppercorns. Not all at once though

What's the difference between regular ol salt and pickling salt?
Internet Shaquille it's finer grain and doesn't contain iodine or anti-caking substances. It's better, but not a necessity for pickling
If you use a different type of salt you risk making the liquid cloudy and the pickled item darker. This won't affect the flavor at all.

Is there a reason why you chose red onions instead of white/yellow? I understand red is a bit "spicier", but would the end result be that different? Just curious.
JCWWorldwide mainly the color, I think. The pink looks so fresh and tasty

We use kosher salt on ours. Check out our red onion pickling video as we add a few other twists and the onions come out bright red.

Not at all. By soaking the onions in hot water you remove some of the raw flavours and sharpness.

Why bother wasting cleaning time with the initial blanch? Just put the hot pickling liquid on the veg, they will soften.

You're right! And you'll notice Chef Tom says suggests doing that very thing right around the 2:15 mark. This really is just the *SIMPLE* base to your pickled onions. Run with it! I love making these, usually I throw a few Jalapeno slices in there with a couple of cloves of garlic and a few cilantro sprigs. Yummmm

When u use the jalapeño and garlic cloves do u use the raw fresh ingredient and boil it with the onions? Or put it Inside the jar raw when you stuff the soft onions into the jar

Hey guys! I'm really excited to see an episode on pickling - pickled just about anything is so delicious with BBQ. I do have a question, though. Chef Tom mentioned that the jar of pickled red onion would last about a week in the fridge. I thought the original purpose of pickling vegetables was so that they'd last far longer than that. Would the jar, if boiled and fully sealed, last longer than a week before it's opened?

i would think if they were properly processed they would last much longer, but im not sure how the texture would hold up.
They’ll be fine a year if you take all the proper steps for pickling.
Thais video is for quick pickling. If you want them to last for 6+ months you would need to can them and do a boiling water bath, etc. We have another great quick pickling of red onion video on our channel

Just watched that one after the Wagyu burgers. The I realised that I haad all of the ingredients in storage, that was 10 minutes ago. Now I don´t have anymore, but I guess I´m going to have pickled red onions tomorrow. Sweet =)

I do a 1:3 ratio of apple cider vinegar to water. Let the jar cool to room temperature before throwing it in the fridge over night.

there are so many ways to make & get creative..but this simple way is a start.. i just heat up my solution and skip the hot water dip. I add hot solution mixture straight up after putting onions in mason jar and off to the refrig..Thank you..

Another way which isn't really pickling... I slice onion and habanero put salt oregano and lime juice... This goes great on steak tacos... leave in a closed container over night so the lime acid get the onion nice and soft... make sure to toss it around whenever you get a chance
How about some pickles? Ive had some onions and pickles from the same jar and they were bomb, not sure how to make them tho, how about a video?
They put the oignon into boiled water only to soften them up or is there another reason ?
1:1 mixture of water and vinegar is way and I mean WAY too sour... the ratio should be 1:2 - 1 part of vinegar to 2 parts of water... also to 1 and half cups of solution always add 1 tablespoon of sugar, it will balance it out...
I pickled mine in a brine with a litle chili paste. Nice and spicy. I also add pickle crisp to keep them crunchy. I'm gonna try a "mexican" pickling inspired brine by adding orange juice and oregano. See what happens.

Love the pickling video, and it got me thinking. How about a smoked pork bahn mi video? Would also like to see your take on the pickled veggies for this as well such as carrots, cucumbers, daikon, etc. This is one of my favorite sandwiches and I think the crunch factor is what really makes it so great.
