Pro tip : In the early game where you don't have much backpack space you can just place a chest near your fishing spot to fish indefinitely

I think it does count, as the wiki says you can cook it. I would say anything that you can make using the stove in the kitchen counts as a cooked dish

Your videos for this challenge (and a different masterchef challenge I saw which involved making every single recipe) inspired me to try my own playthrough with the following rules:
1. You can't sell anything other than cooked goods even before you've got a kitchen (so help requests, quests and food from monster drops/trash cans/community centre rewards are the only way to get the first 10k). I've finally managed to get a kitchen towards the end of summer in my own playthrough but it took a painfully long time
2. The challenge is complete when you've unlocked, cooked and shipped every single dish - which in addition to befriending various villagers also requires completing the community centre and a fair bit of ginger island in order to get the last few recipes and the ingredients required for them.
I'm almost at the end of autumn/fall in year 1 and although there have been times when I regretted everything I am also having fun with it. I've finally reached farming level 8 (which took forever as I bought hardly anything until I unlocked the kitchen, so for most of the first 2 seasons my only crops were the starting parsnips, museum rewards and mixed seeds) and unlocked the oil maker and I already have a source of eggs, milk and flour so the next major milestone is being able to make my own sugar... which means raising enough money to unlock the desert.
that's a great ruleset for this kinda challenge !! i was daydreaming of my own ideas but I might wanna use yours instead :) thanks for writing it out

To build a fish pond and fill it with a daily spawning fish like carp would be probable more profitable than the coop. On the one hand Coop+Chicken cost 4800/35 for the sell price of fried egg = 138 days until profit vs fish pond cost 5000/75 for the sell price of sashimi = 67 days until profit. On the other hand if you had spend more capital to fill all 4 coop spots with chicken the coop is more profitable ( 7200/140 = 52 days until profit), but the lower barrier of entry for the fish pond make it a better choice for the early game.

You should make crabpots. The fish that come from there are cheep, great for shashimi! Also, it acts like an ato-fisher.
I'd rather no fishing than no crops. Fishing is way too boring. Also I dont forage cause going all around the town and outskirts in the middle of the night for profit is too much.

to add some challenge, add a cap on the amount of times you can sell a dish, that way you arent just making money one way

This video and series is really nice, but there's one thing I think would improve it even further: an end goal. Will you continue until you've finished the community center, or cooked every recipe? Or just goof around for a year to see what happens?
I think it is important to have a goal to work towards in such a challenge mode. You have said "challenge accepted", but at what point can you declare "challenge completed"? I think it would elevate the series (and perhaps your enjoyment of playing it) if there was a fixed and stated goal to work towards.

So in my own playthrough i found that crab pots are your friend when it comes to sashimi. each crab pot catch can be turned into sashimi and you can place them inside your farm as long as you have water to put them in. that gives you a chance of 1 sashimi dish per day per pot. once you hit lvl 10 fishing you can either make it so crab pots dont require bait or make it so they dont produce trash. one of the other fishing upgrades makes it cost less materials to create crab pots and you can turn bug meat into bait. in the end with 40 crab pots on my farm i sell 40 sashimi consistantly per day for a total of 3000 gold/day. crab pots (with the cheaper build option) is 2 copper bars 25 wood or can be purchased from willy for 1500g. it means that going into lvls 11-29 of the mines nets you both bug meat and copper required to build and maintain them while also providing fiber materials for the bait producing worm bin. to create the worm bin requires a steel ax and hardwood and gold so its not something simple to make but with bug meat and turning that into bait you can at least make a nice haul of sashimi leaving any fish you catch for quests/making other dishes. so for 40 crab pots you need 80 copper bars (or 400 copper ore) and 1000 wood with 40 bait per day (or 8 bug meat) for a nice haul every day. that sounds like alot but at least you can use crab pots to build up to that and then just either leave it alone if you want the trash it produces for the recycling machines (which can give you materials to use in other constructions) or keep putting in bait for a guaranteed catch.
another thing to consider is coffee (which requires luck in the mines to get it dropped from monsters or 2500 from the travelling trader but only one is needed and can then be used to produce more seeds to plant over a period of time) since the tripleshot-expresso sells for 450g/each and costs 5000g to get the recipe. it requires kegs (lvl 8 farming - 30 wood, 1 copper bar, 1 iron bar, 1 oak resin) to process 5 beans into coffee but its faster than growing crops as long as you have enough beans and kegs.
