    Recipe: Quick & Easy Makke Ki Roti and Sarson Ka Saag
    Ingredients
    For Sarson Ka Saag:
    1 kg mustard leaves (sarson), cleaned
    500gm spinach leaves (palak), clean it
    500gm bathua leaves (optional), cleaned
    2 tbsp maize flour (makke ka atta) for saag
    4 medium onion, roughly chopped
    3 - 4 garlic cloves, minced
    1-inch piece of ginger, grated or finely chopped
    2 green chilies
    4 medium tomatoes, roughly chopped
    4 tbsp ghee (clarified butter)
    1/2 tsp red chili powder
    1/2 tsp turmeric powder
    Salt to taste
    For Makke Ki Roti:
    1/2 cups maize flour (makke ka atta)
    1/4th cup Warm water for kneading
    Salt to taste
    1 tsp Ghee or white butter for roti

    Instructions
    For Sarson Ka Saag:
    Wash thoroughly mustard leaves,spinach, bathua in running water
    1. In a big pan or pressure cooker, add mustard, spinach, and bathua leaves,chopped onion,tomatoes, ginger, garlic, chillie with 1/2 cup water and pressure cook for 2-3 whistles. Let it cool, then blend into a coarse paste.
    Add salt and turmeric powder.
    Mix maize flour or besan in 1/2 cup water and mix in saag and cook again for 8 -10 minutes.
    Adjust consistency of saag by adding water.
    Make tadka:
    Heat ghee in a pan,add 1 tsp cummin seeds,1/2 tsp asafoetida ,1/2 tsp fenugreek powder and sauté garlic, ginger, and green chilies until aromatic.add 1/4th tsp red chillie powder cook until golden brown.
    Add the tadka in blended greens paste and mix well. Simmer for 5 minutes.
    Adjust salt and consistency as needed.
    For Makke Ki Roti:
    1. In a bowl, combine maize flour and salt. Gradually add warm water and knead into a soft dough.
    2. Divide into small balls, flatten them slightly, and roll gently into thick rotis
    3. Heat a tawa (griddle) and cook the roti on medium flame. Flip and cook both sides .
