The tv height can be adjusted on the part of the bracket that’s attached to the tv. The wall mount won’t move. Even if the bracket attached to the tv is at its highest setting, you can easily get a different piece that will work with your wall mount.

If you don’t watch the podcast, you should definitely go back to when they first started it because they talk openly about all that stuff🤘🏼
A word of advice, you don't want your TV hung so high on the wall that you have to sit on the couch and look up like you're sitting the first 3 rows at a movie theater. It will be fine at first but over time you'll realize your neck is always in that looking up position to watch the TV. Think about if you'll be laying on the couch too instead of sitting. You can find online the "ideal" height of your TV based on how big it is.
