Hi Neha. I tried making it but it was futile. I steamed for 25 minutes and opened to check the doneness. To my surprise the custard overflowed from the rameken. I covered it with aluminium just as you did. Don't know where it went wrong
So what I think is that it was over filled. Was the flame too high / because over bubbling of water can sometimes get water inside. 2 ppl tried it yesterday & it worked fine for them so not sure what the error was

Post Steaming - You need to refrigerate for atleast 2 hours before unmoulding. You can unmould & refrigerate again if you want or serve instantly

Once remove from refrigerator you can serve directly, how will the caramelize come liquid

Yes Yes It will.. One hack - Before unmoulding, Just dip in boiling water for 5 to 7 mins and then unmould.. It will flow down
What should be the consistency of the custard after steaming?
Can we use clinge wrap to cover instead of aluminum foilm

Sunflower Seeds Oil or Canola Oil is the best..

Yes ! You will need some water in a big tray & then add it.. Basically Water bath
Can we add mango puree to the custard?
So It might split because of the acidity..

@@nehadeepakshah yup I filled until the brim. Flame was bit high. Water didn't enter the ramekins. The custard was overflowed.
So it was over filled, you got to leave a little space.. Because when custard heats, it expands a bit.
