Mmm, poppy seed rolls. Very good. Personally, I like nut roll better (filled with sweat almond filling), and sweet-cabbage filled bread. Basically, you make a huge Brioche roll filled with a sweet stewed cabbage, and roll this into a thick pancake and eat it like a stuffed pizza 😊. Also, there sour-mushroom/sauerkraut soup that if you like sauerkraut, will absolutely knock your socks off.

Bryndza is not for everyone-the best way I can describe it for people used to more common cheeses is like feta (salty), but sour and soft (like goat cheese), with maybe a hint of sour cream. Personally, I think it is delicious…and the potato dumplings (halušky) will fill you up fast. The further east in Slovakia you go, the more soups and sour dishes you will notice. Some are Slovak adaptations of Hungarian food, and some are directly influenced by SE Polish and Western Ukrainian dishes. Near Bratislava, in the west, across the river from Austria, there is more of an Austrian and Czech influence-hence the good beer, lots of meat, less cabbage.
