A little tip for the grease bucket, I use the Asian take out boxes that fit directly in the bucket, use it for a couple of cooks and then throw it away. You can get 50 of them for 15 bucks on Amazon.
I have the 720 version. Basically the same as yours other than the attachments. I totally agree with you. These grills are soldiers. I love these grills.
After 5 years mine got caught in freak snow storm on my covered patio without its cover on, controller just shit out. Just ordered a Pellet Pro PID controller and upgrade kit. A 15 dollar smoke tube really helps out at times.

I have worked out a hack for the searing plate, the camp chef SG has a metal rod with a handle/know to pull the plate open and closed. Get a piece of thick gauge wire and put a bend in both ends and drill a hole in the flap that is on the plate and a hole in the side of the grill. Then you can open and close the plate in one second flat!

I have a pit boss 820 also. I love it, I have used it just about every Sunday for 3 years now with no issues. I have even smoked brisket in -21 below zero. Meatloaf is awesome on a smoker.

I can definitely say that mine has treated me VERY well. Being almost 2 years old now, I can only imagine how much technology has improved. I wouldn’t be surprised if pitboss made an app now for their pellet grills! Transfers are awesome, but definitely pricey! Good luck with tour decision Raul!

I picked up the 1100 a few months back. It's been really good except that on my last cook the paint started peeling on the inside of the lid and the top of the cook chamber. I'm not too worried about it but it's something I need to scrap off or take care of before my next cook.

All you need is a grill eye thermometer it links to your phone you can put one probe in the meat and the other on the smoker and it will alert you when it gets to cool or to hot
The grill plate is killer! Definitely a step up from my GMG. But I agree, the versatility of these cookers is the same reason I gave up my gaser. Nice job, bro! And hey, is The Gaucho gunna be its own channel, or are you transitioning this one to that name? Or.... is it 1 channel, 2 names?

Hey great video thanks for uploading but I have a few questions. So I almost bought this grill until I realized the slide plate for charring does not have a handle like the 1100 pro. The 1100 is just too big for what I need so that's why I won't buy it. Do you find it a hassle to use that grate grabber each time you want to sear? And what do you use to open the plate? What is the hook grate grabber called so I can get it at Fry's? Thanks!
Thank you very much! That actually came with a cheap fire pit I purchased lol. I lost it a while ago and just use a spatula or tongs. Its no hassle at all. Some people have actually modded their grills, and installed a rod that connects to the slider. Pretty awesome! Thanks for reaching out and watching!
It looks like you are from AZ, possibly NM or CA. I am considering a Traeger or a Pitboss and I was wondering if you used either one. What is your opinion on the two Do they work well in the AZ heat?
Ryan I have the 820 and can fit 4 racks of baby backs no problem, maybe 6 if you crowd them. I don't like to crowd so I get even heat and smoke all around! It wouldn't hurt to get the bigger one.
I’ve been torn for several months between getting a Pellet grill and getting another charcoal grill (actually the Weber you have is one I’ve considered) ... I love the versatility and simplicity of the pellets but, as a lifelong charcoal griller, I am very hesitant about losing that unique charcoal flavor on my meat. I’m afraid the pellet grill will produce meat with no unique flavor, much like a gas grill or baking. What has been your experience with flavor profile on the pellet grills vs charcoal?

Since you are such an avid charcoal fan, you might want to take a look at the new Masterbuilt Gravity grill / smoker. I just got one a few weeks ago and LOVE it! MrBigKid Yes this helps a lot! Awhile back I actually watched your video of smoking on the pellet vs wood tip so I got a little bit of your perspective then but wanted to hear more! When you are thinking of premium meats like brisket, pork butt, ribs, etc; a lot of that is determined in the prep and quality of meat. My bigger concern are more common throw on items like chicken, burgers, hams, veggies, etc. Thanks for your response and recommendation! I will check out that grill and some of your videos with it.
I have an 1100 pro had the same problem on pulled pork when to sleep and didn’t have it too off so it stop feeding pellets but it was plenty in hooper... I guess they fixed it tho cuz mine cut off completely
I noticed you said you want to upgrade to the Austin XL... Why is that. I'm looking to purchase and am deciding between the 820 and Austin XL. (this will be mainly for meals for small crowds)
The biggest reason was size, and the whole “bigger is better attitude 🤣” However I have never found size to be an issue with the 820! I can fit legs briskets, lots of ribs etc.

Mine the auger motor die in the first year, and now at my second year the controller catch on fire and I m out-of warranty. So I'm looking to upgrade to a savannah stocker

Sure I have a few tips. Is recommending keeping it nice and low in temp. The lower the temp, the more smoke it produces. You can also try adjusting the P setting. Some people also use smoke tubes in their grill to add smoke to the process

I suppose I’m a little disappointed that for the money it doesn’t smoke well. I don’t think I should have to add a outside smoking source… you know?
One possibility is smoking meat in the beginning on smoke setting as well. I have made some very flavorful BBQ with the pellet grill, however I don’t think pellets can ever achieve the same smokiness as a stick burner or master built gravity charcoal smokers. Pellets are in a constant combustion / fire state, where logs and charcoal smolder and release heavier amounts of smoke. I feel your pain man!
NO!!!!!! These smokers are pretty fragile. I'm originally from Los Angeles and moved to PA 7 years ago. In LA or Arizona I probably would not experience as much work on this smoker if I just kept it covered. Now for the rest of us who live in States that have actual weather there is normal upkeep that must be done. 1. Always keep covered. 2. Empty pellets after every use (if you leave them in and it's a very humid day the pellets can breakdown and turn into a concrete like material in the tube and you'll have to take it apart and clean it out). 3. Make sure you keep it clean inside otherwise more likely than not you will experience a large grease fire at sometime. I've had mine for 2 years and have repaired it so many times I could be a company repair technician. That being said I love it. Yeah I would have moved up to a RecTec that is built with a lot of stainless but I just can't do it, I love the ability to sear the meat over the fire if I want that only Pit Boss offers.
Can you tell me how big of a heat difference you experience. I put mine at 225 and it heats all the way up to 305 degrees then shuts off and cools down to around 210. It's that normal?
Vw Guy I purchased mine in May of this year. I’ve had some terrible temperature issues. I suspected something was wrong when my ribs weren’t completely done, and confirmed by using my Maverick thermometer. I get spikes and dips sometimes over 100 degrees. PB tech support has been really nice to me, but parts have been taking FOREVER because of Covid. They tried sending me a new temp probe first which took 5 weeks, and that didn’t fix it. They’re sending me a new control unit now, and I’m still waiting. It’s almost September, and I’ve basically missed out on my first summer with my new PB because of this issue.
Hate the pit boss. Every time Ive has problems with doing its job. Back ups burn out burn offs like just now. Bed at 2am refilled it with same pellets I’ve been using kept inside house. Went out so relit before bed. Working good. Came out to blaze because went out then refilled and never stopped pumping a pellets causing a huge fire while sleeping! Never ending nightmare. Every use has a problem that stems from product not working. Yes clean vacuum every use and tried many types of pellets. Over it it’s for sale. Sorry for bummer post but truth hurts. Pos going back to old school. At least I won’t have mechanical failures, major temperature fluctuations and all the above. Have to baby sit pit boss so may as well do it by hand myself throughout the night since pit boss fails every 4+hr unattended brn

Brad Distler. I have the Austin XL. It was a real pain in rear when I first started smoking and baking, and grilling steaks and burgers is completely out of the question. The right side is always 50 to a 100 degrees hotter. I you try to bake anything say at 350 degrees it always goes to 450 degrees even know you have it set for 350. Smoke settings work great and is the only reason I have kept it.
Any auger jams? My 440 deluxe has constant auger jams. Pit Boss says to clear out the hopper and auger after every use!? TecRec and traeger owners don't have this issue.
Oof wow I never heard of cleaning out the hopper and auger! Sometimes pellets sit in there for weeks. I have never had a jam. Is it very humid where you live?
MrBigKid I live in the PNW. Not exceptionally humid here. Machine sits under cover. PitBoss/Dansons says gives me a solution I find very odd as well. Simply put can’t recommend the Dansons design! Or their customer service assistance :/

How is the noise on the Pit Boss? My GMG DC makes this noise ua-cam.com/video/NCZUrpsQQr4/v-deo.html and I want to get something quieter and a little bigger in the $400-$600 range. I was looking at the Camp Chef DLX or PB 820.
MrBigKid Nope no one. Gave up after 3 days. Later I discovered a hidden connection with a plastic cover. Bad connection redid now works. I was all over the web site from a after sale perspective totally worthless and no one answers the phone and just try to find a support email.

I drilled a hole in the tab of the cover, then in the right side of the box. used a 3/16 rod to connect to cover. can open or close when desired

A wireless thermostat (yes they have ones with apps) would have helped. I Always use my thermo pro for that reason

I just leave the pellets in the hopper. I end up refilling with a different type when it runs low :)

I've got the GMG Daniel Boone and it has 5° temp increments. Does the Pit Boss have this or is it needed?
No unfortunately, however I believe the modern models might be a little more precision and have smaller increments.

Can you tell me how big of a heat difference you experience. I put mine at 225 and it heats all the way up to 305 degrees then shuts off and cools down to around 210. It's that normal?
Make certain the temp probe inside the grill is kept clean. I love mine and ditto on the "its the best grill I've ever owned.

Vw Guy I purchased mine in May of this year. I’ve had some terrible temperature issues. I suspected something was wrong when my ribs weren’t completely done, and confirmed by using my Maverick thermometer. I get spikes and dips sometimes over 100 degrees. PB tech support has been really nice to me, but parts have been taking FOREVER because of Covid. They tried sending me a new temp probe first which took 5 weeks, and that didn’t fix it. They’re sending me a new control unit now, and I’m still waiting. It’s almost September, and I’ve basically missed out on my first summer with my new PB because of this issue.
Would this be good for some one that grills a lot of Carne Asada ?

Hate the pit boss. Every time Ive has problems with doing its job. Back ups burn out burn offs like just now. Bed at 2am refilled it with same pellets I’ve been using kept inside house. Went out so relit before bed. Working good. Came out to blaze because went out then refilled and never stopped pumping a pellets causing a huge fire while sleeping! Never ending nightmare. Every use has a problem that stems from product not working. Yes clean vacuum every use and tried many types of pellets. Over it it’s for sale. Sorry for bummer post but truth hurts. Pos going back to old school. At least I won’t have mechanical failures, major temperature fluctuations and all the above. Have to baby sit pit boss so may as well do it by hand myself throughout the night since pit boss fails every 4+hr unattended brn

Brad Distler. I have the Austin XL. It was a real pain in rear when I first started smoking and baking, and grilling steaks and burgers is completely out of the question. The right side is always 50 to a 100 degrees hotter. I you try to bake anything say at 350 degrees it always goes to 450 degrees even know you have it set for 350. Smoke settings work great and is the only reason I have kept it.
Whats the difference between this 820 and the austin xl?
I believe the XL is bigger, and has upgrades like a shelf in front of the cooking chamber, and a window in the hopper?
Any auger jams? My 440 deluxe has constant auger jams. Pit Boss says to clear out the hopper and auger after every use!? TecRec and traeger owners don't have this issue.
Oof wow I never heard of cleaning out the hopper and auger!
Sometimes pellets sit in there for weeks. I have never had a jam.
Is it very humid where you live?
MrBigKid I live in the PNW. Not exceptionally humid here. Machine sits under cover. PitBoss/Dansons says gives me a solution I find very odd as well. Simply put can’t recommend the Dansons design! Or their customer service assistance :/

Different topic ;) I have a whole restoration video coming in the next few weeks :) Its a 4 year old OG blackstone with a bunch of surface rust. It served as outdoor table that held my old electric smoker for 2 years.

How is the noise on the Pit Boss? My GMG DC makes this noise ua-cam.com/video/NCZUrpsQQr4/v-deo.html and I want to get something quieter and a little bigger in the $400-$600 range. I was looking at the Camp Chef DLX or PB 820.
No support on web site. Hope you do not need any support. No troubleshooting no people.

MrBigKid Nope no one. Gave up after 3 days. Later I discovered a hidden connection with a plastic cover. Bad connection redid now works. I was all over the web site from a after sale perspective totally worthless and no one answers the phone and just try to find a support email.
