    Great video and appreciate the honest evaluation of the equipment being used. Like you said, if you don't mind the learning curve and like a sharp knife, the stones are the way to go. Glad I found your channel and subscribed. I had prior to this, but this was a nice surprise.

    I've always used and old 3 sided Arkansas wet stone. And I can't imagine getting one sharper . I can make any knife absolutely surgical sharp . It was like 25$ 15 yrs ago

    I have used a Lansky kit for years on all my kitchen knifes. I have a Tormek 7 for everything else and use it's leather strop on the kitchen knifes too.

    if you decide to get any of theese guided sharpeners ill recommend getting a universal stone holder for them so you can use any 4-6 inch stone that you want because these diamond plates that they come with doesnt last for shit

    it would be interesting to see how these compare with those lower end manual pull through sharpeners that most people use.

      Unfortunately, those are pretty bad. They create a serration on the knife edge usually so it seems like the knife is sharp but it is actually sawing through whatever you are cutting.

    What about - DMT Fine Diamond Sharpening Stone,? I saw this reviewed on ua-cam.com/video/tJfNR-G69fA/v-deo.html and was very intrigued by the comment about the stones made with Aluminum Oxide ( which I have, and may explain some of the issues with trying to get a good edge as a beginner!)- Would be very curious o your take

      I was going to purchase them for my business where I would prefer not to have water continuously dripping on the stones. When you start getting into the higher grits, unfortunately, the diamond does not produce consistent results. It is very aggressive as well not that that’s a terrible thing, but for the price, and they are very expensive I would prefer to use the water stones.

    Ken Onion Worksharp. Have tried several fixed-angle sharpeners over the years. None bad. But all require some skill, thought not as much as stones.
    But I keep my selection of Kai Shun knives razor-sharp very easily with the WSKO edition.
