There wasn't a reason we couldn't have had Spider-Man 4. Change the director, cast, whatever. Re-doing the origin was pretty pointless. We could have had some great story arcs like Spider-Island, Black Tarantula, a Man-Spider movie or even... the Clone Saga!

Spider-Man 3 had two versions when it came out on DVD. The single disc version and the 2 Disc Version. There was no re-release.
