I think you installed it wrong here’s why: if your SSD is double sided, then you will have to use grey pads on both sides, otherwise it wouldn’t fit. Right? This makes the grey pads are the ones transferring heat. And the white pads are just fillers. I saw another video of a guy who did the same as you, and he provided results of 2 Celsius difference between heatsink and no heatsink, which means it’s not doing its job.
In conclusion (for one sided SSD): Bottom part > white pad > SSD > grey pad > top part.

No, white is a thick thermal pad, depending on the thickness of your m.2 ssd you need to apply it

If your m.2 is sitting firmly inside those heat sink, then it's not a problem.
In another video someone put the grey one on top of the SSD, not like you did with white one. Are you sure this is right (I really dont know thats why I am asking as I have both the SSD and the Jonsbonin front of me ;-) ).
It also depends on which brand of SSD u r using too. See which one fits the best. Your SSD just have to be sitting firmly inside is all you have to worry about. Both the pads have the same job of decipating the heat. Only the thickness is different.

I've tested the temperature of both the methods(white on top grey on bottom AND grey on top with white on bottom) on this video. You can check that out if you have doubts.
did u faces any problem so far while using this heat sink ?
No. Using it on my ps5 and PC.
I applied only grey pads on both sides will it we ok (my ssd is wd sn850)
Just make sure your ssd is placed firmly without any movement between the heatsink. Rest is OK
Should we remove the sticker label(top) where serial number etc written on wd sn850 ssd ?
No. That sticker is also a type of heat removal helper and also it’ll void your warranty if the sticker is removed. Pls like and subscribe if this video was informative.
