Ingredients
For Sugar caramel
Sugar 1/2 cup
Hot Water 1/4 cup
For the cake
Dates 1 cup (soft dates )
Carrot 1cup
Cashews 1/3cup
All purpose flour 1cup
Sugar 3/4 cup
Eggs 3 nos
Oil 3/4 cup (I used sunflower oil for this cake )
Baking powder 3/4 tsp
Baking Soda 1/4 tsp
Cinnamon powder 1/2tsp
Vanilla Essence 1 tsp
Salt 1/4 tsp
Bake at 175 C for 40 -45 mins in a preheated oven
Notes : while making sugar caramel, Keep it in a Low flame n add the water carefully when it becomes golden brown.
Add 3 tbsp of all-purpose flour to the carrot dates mix , so that the mix won’t settle down

Hi! im making the cake right now, and for the caramel sauce, you wrote 3/4 cup water in the description, but in the video you wrote 1/4 cup. I did 1/2 a cup to be safe. Which one is the correct measurement?
Sorry It’s was a mistake. You can add 1/4 cup of hot water for 1/2 cup of sugar .
It was super tasty but can reduce a bit sugar as it was a bit too sweet 😋

Caramel flavour gives more taste to this cake .. I suggest caramelising sugar
What vegetable oil do you use? Can I use coconut oil instead?
Better to use sunflower oil or canola oil than coconut oil

When do you add water in caramel? After it is cooled? Should we add hot water or cold?
Have to add the water once the sugar gets golden brown and it should dissolve completely over a medium flame . add hot water

You can replace eggs with curd
Can take around 1/2- 3/4 cup

You can use the same measurement as I mentioned in the video .. I have taken 1 cup flour .. so can just follow that shown in the video or detailed ingredients given in the description
Can we reduce the amount of sugar from 3/4th cup to 1/2 because dates are already sweet right?

Yes you can reduce to 1/2 cup.. but 3/4 cup was just perfect for me

can i add milk or whipping cream instead of water in caramel
You can use warm milk but If you need to get a dark brown colour , have to use water

I used two 22*13 cm pan to bake this cake .. n both cakes weigh together around 1 kg ..

Usually caramelised sugar gives the colour n taste to this cake ..the sugar will become dark brown colour ..
