Cheese boards can be dessert or an appetizer. If you're French enough it can be the whole meal. Generally in my experience nicer restaurants would serve a form of charcuterie early on and have a selection of cheeses for dessert.
When you have multiple courses you really need to prioritise taking orders, clearing empty tables and serving the dessert items first, this will clear tables quicker and take the pressure off the queue outside. Serving people soup and salad is pointless when there's a queue outside since they could be sitting there for another 1-2 courses.

things that could have made the run better. freezers for the soups. instead of putting the soups on a counter, put them in a freezer. then whatever is left over is saved for the next day. also the soup cooks faster as a repeat remake instead of cooking from scratch. thus even freezing an empty soup pot is still worth it. prep station is also great even though you were looking for it, frozen one would be nice but the mixer chops the lettuce so fast that it'll fill up the prep station before someone orders it so its not necessary. and yea, as your earlier video showed on automation of salads, mixers are not good with tomatoes for salads.
Dude, DNG not taking the order for the cheeseboard killing this run was SO frustrating to watch. He LITERALLY just picked up a dirty dish from that table signifying only one meal left before they were done eating. Good try though boys. Hopefully you get the chance at going into higher rounds!
For extra counter space put a zig zag in the kitchen to dining room counter. Half the counters on the dining room side half on the kitchen side. It'll give you one extra counter.

I maybe know the problem for the tomato it's because it's a conveyer mixer that always pull item forward since it isn't a smarter conveyer if it was replace into a rapid or normal mixer it might be okay.

The trick is to have the Salad pushing to combiner pointed at the tomatoes chopper.
