if you live in an area with rust you would want to remove the shims and clean under them and apply some grease, so it does not build up rust and cause pads to stick
you might want to mention putting the rubber plug hole over where the adjusting screw is on brake drum in case you want to adjust it after everything is assembled
a very unusual way to change brake fluid never heard of pumping it back from wheels most people figure there is rust and such at caliper, so they don't want it going back through system. I don't believe brake fluid is water soluble it tends to absorb water from the air like alcohol does most people clean brakes with brake clean spray solvent, so it does not leave water or residue behind.
