You took most all the the fat off is because you are using a Pellet Smoker. What about a regular wood and charcoal Smoker. Always learned to leave a little bit of the fat to protect the Brisket. I assume the Pellet grill more controlled.

How quickly does that cuisinart heat up? Would it be good for searing steaks?
Not long at all probably 10 to 13 minutes
It also has a searing plate at the bottom that opens up. Great for searing!
