Well, okay, first off, it seems like the player needed to have a serious talking to from the DM and group about the behavior, but at the same time, there are a lot of points that need to be said:
    1. Plenty of people self-insert in D&D. They are pretty much themselves, but with a stat block, and don't kid yourselves, this entire story is setting up as taking game behavior personally. Does that make the behavior acceptable? Of course not, that would be silly, but he isn't the only one doing so. The difference is that one player at the table is having a negative experience, and I'm guessing, doesn't really feel listened to, which is what's usually behind this kind of thing.
    2. The character's backstory should not have been approved to start with, since it was clearly putting forth a character who was going to be, at the very least, deeply morally grey, trying to backdoor an evil character. That's on the DM
    3. Delineating an entire race as "peaceful and migratory" leaves very little room to roleplay, since that lacks conflict. Also, plenty of peaceful people have been invaded, so yeah, wars can still be a thing for peaceful people ( "Until the Fire Nation attacked", i.e.).
    4. Moose centaurs are a homebrew, so basically, you set up and approved a homebrew species, then proceeded to punish the player for using it by path of exclusion... yeah, that's not helping the matter, that definitely added to it. That's the DM adding to the problem.
    5. Again we come to a point where play should have stopped, with the DM and players addressing the problem behaviors out of game, which is becoming a common element of the story quickly, since we have thus far got things such as the behavior in previous campaigns, the backstory, and now invasive questioning. For an IC solution, start to mention that he feels his attachment to his Oath starting to fray as he's doing the invasive questions, which lead away from peace and love.
    6. Blood is one of the most used tropes in Fantasy settings. By that measure of explanation, no one should be engaging in witty banter during a fight, because no one did that. Saying that "There isn't modern medicine" completely skips the point that there's blood magic, blood rituals, blood literally used as components for spells, Lycanthropy is passed by bite, vampirism passed by bite, and is a significant component in many Fantasy stories. The shit's everywhere, and "don't hug the obvious plague victim" isn't meta-gaming regardless of time period, because vomiting blood is pretty definitive proof of plague. The DM is absolutely wrong on this one, and thus, is contributing to the issues at the table. As well, how are there NO diseases, but the spell "Remove Disease" is a spell in D&D? Hell, they figured out the Black Death without modern medicine (Granted, slightly off on the cause, as it was the fleas on the rats, and not the rats themselves, but they still figured out the routing), and that is WITHOUT magic that exists.
    7. Is he a Paladin, or not? Cause Paladins have healing, specifically, they get spells such as Cure Wounds, Detect Poison and Disease, and more at 2nd level on top of Lay on Hands. Medicine as a skill works off of Wisdom, so I'm not sure how the DM decided that a low intelligence makes him have a low Wisdom, but again, this is unfairly striking a player's action that he was literally taking to try and protect a member of the party. You know, that thing you complain about him not doing later in the story.
    8. Okay, again, cheating bad, but it doesn't happen in a vacuum, and we need to talk about this, because the DM and party aren't blameless here, because as I've noted, several decisions have gone against the players that absolutely should not have, and at a certain point, it does become a "Well fuck you, too!" situation.
    9. Paladins do not get a "dual thing", they just don't. The dueling fighting style is about using a single, one-handed weapon, and has nothing to do with numbers. Also, you guys have a Barbarian... which is the tankiest of tanks in D&D, because of their insane HP, and resistances to the most common forms of damage in the game. How is that making the encounters take longer? This feels more like the party decided to play his character for him, and what his focus was going to be, since he was in fact already participating in combat.
    10. Yeah, I'll bet he was excited. Why wouldn't he be? Go look over the last set of points, and you may discover a reason for him having pent up frustrations with the party at large, so of course he had fun with it.
    11. Why is wanting to cleanse an evil ring... bad? What you just named was the core plot to Lord of the Rings. You present it as bad, and unattainable OOC, but why would it be unattainable? And why would your characters just leave it in the ground? Why would you NOT want to destroy the evil ring? Literally every artifact in D&D has a specific way to destroy it, it's included in the descriptions of artifacts, so yeah, he went for the more heroic option, and apparently, got shit on for it.
    12. Did it occur to, I don't know, ANYONE that what he wanted was a Quest to cleanse the ring, rather than simply dumping ring cleansers at every temple the party passed by? Like, this should be a major arc of the campaign, and it seems to be getting treated like he's the asshole here for wanting to engage with a fundamental story of adventuring. If the DM did not want a plot like this, maybe not include it in the game?
    13. Again, the ring was a creation of the DM, so how is it the PLAYERS fault that the DM did this? The DM controls the possessions, that's just how that works, with the Paladin making saving throws to retain control. Also, during possession, the DM should have been taking control of the Paladin's character, not allowing him to play it out, because he's not in control of the character anymore. Also, this must be a pretty shitty demon lord if every time a possession occurs, the only possible thing it wants is, "Kill the party".
    14. Okay.... so WHY does it matter that it's a weapon used by an evil NPC? You just described the majority of items and treasure that ends up in the hands of any D&D party. Yes, he was being a jerk, but honestly, I can understand it at this point, especially after the ring fiasco.
    15. If it isn't a magical candle, then WHY does it matter if it is lit or unlit? Why would it matter if he lit it early? Since according to the story, it's just "A" candle that needs to be lit, you can just get a bunch of them, and rock out. You can't have it both ways, this is a thing that needs to be explained. And again, here's the DM throwing in a random demon to goad him, and keep ringing that same bell, again and again. The player goes with it, and AGAIN, is punished for it, and looked down on by the other players.
There are so many fucking problems with this game, and *most* of them are not the Paladin. The DM smack-talking the player after they're gone? That's an issue too.
