great questions! Monster damage "works" on NW structures and on T1 NWs the AP limits don't seem to apply to structures - so to get the most damage out of T1NWs, when attacking an enemy base, most swap to full AP accessories, kutum, and pop frenzys. To dismount a cannoneer you can do a few things, horse charge (doom horse stomp will nearly 1-shot a cannon), ANY level of BSR skill (even 10% and 25% work!), or Trina musket.
