Top Crop IPA - Ekuanot / Medusa Hopped Kveik IPA - In One Day!

- In this brewing video, we're making an IPA using Kveik yeast, Medusa, and Ekuanot hops. In order to ferment this beer, we top cropped yeast from the krausen of an actively fermenting batch. This process was a bit of an experiment, but it's actually a very easy and efficient way to harvest yeast. The yeast found on the krausen is all viable, healthy, and clean, meaning it doesn't need to be washed like yeast at the bottom of a fermenter.
This homebrew recipe is also extremely quick to make. Because of shorter mash and boil times and kveik yeast, we had a finished IPA in just about a day. Kveik yeast is an excellent choice if you're in a pinch and need to make beer fast. In our case, we had friends coming from out of town and the last thing we wanted was dry tap lines. We recommend you brew this Kveik IPA during the summertime and share it with friends at cookouts, pool parties, and tailgates. Pair it with some grilled steaks and juicy hamburgers or lighter foods like tomato salad and watermelon. I've had the same idea with Kveik. Works like a charm. I call it share-croppin'.
It’s a great idea, especially with that yeast I have many mason jars filled with starters ready to go from the exact same strain That I top cropped from.

Just today, I cracked open a low ABV ale I fermented with Voss Kveik. Instead of top cropping, I used the yeast from a previous batch, washed it once and let it dry to flakes, then just put the flakes into the fermenter - no starter.
And let me tell ya, it's pretty friggen good!

Kveik drops the finished pH of a beer more than a traditional strain of sacch. Shoot for a higher mash pH when using it to off set this.

Can you crop and reserve or do you have to toss it in a batch of wort straight away?
Someone else asked, but is it viable to save the top crop? Or does it need to be used immediately
I'm using essentially original Hornindal Yeast.
To get a neutral fermentation I'm doing a 2 liters starter to get close to 150 ml mark of the yeast cake.
It takes 24hs of starter at room temperature to be completed. Actually, room temperature here in Rio de Janeiro is close to 35ºC.
Then to get a neutral beer fermentation I cold the wort to 35ºC and let the yeast do the rest.
It takes at most 5 days to complete the fermentation.
To collect the yeast a Norwegian paper say that the Hornindal yeast should be collected by top crop always.

To me it's very strong and overwhelmes anything else and makes it also smell very yeasty
Tried letting it settle for a while? It's supposed to a quite neutral yeast.

Hmm, I love mango so that could be good.
Might just have to sift through some of the UA-cam no copyright music channels to find some music you like that isn't subject copyright infringement. There's all kinds of different music to suit ones taste.
