I REALLY love Sanji’s portrayal in the live action. I like the change from him being pervy and sometimes flat out creepy to him being flirty but aware of boundaries.

Same. But most of the "creepy perv" stuff is Toei's potrayal of Sanji. Most of it is not in the manga, Toei added it on the anime.
Yes, Sanji IS pervy in the manga, but not as much and not as "creepy" as Toei sometimes make it look.
That is one fo the reasons I absolutely prefer the manga, since Sanji is my favorite.

In the Baratie arc of the manga, we saw a flashback where Sanji started smoking at a young age because he thought Zeff would start seeing him as a man and no longer treat him like a boy.

I love this version of Sanji. He quickly became my favourite in the anime because of his kindness to Ghin, but I love how charming this Sanji is. How he is so badass but also how his toned down flirting is shown in a more charming light than a goofy or perverted light. And how Taz’s eyes sparkle as Sanji talks about the All Blue, it just feels so genuine. Sanji and Luffy have always felt like mirrors to each other in a way, so having Sanji give Luffy the “being a captain means making tough decisions” talk felt fitting while Zoro was out of commission. Especially since that does become a dynamic after Sanji joins the crew (if Zoro’s not there, he and Nami are basically Luffy’s seconds) so to see it happen even before he does join in this version, it’s a good way to show how easily they can fall into Sanji being a big brother to Luffy and helping give him advice when Zoro’s not around.
Taz himself seems to be a really great guy. Cooking off camera for everyone and not just to practice for the cooking scenes, staying with Inaki in the water so he didn’t have to be alone.

Him being a simp who never hurts any woman even if they are about to kill him is because of his tragic backstory.

I find Sanji a microcosm about how you adapt something as cartoony as One Piece to live action. His flirtatious stuff in the manga preposterous hyperbole, which IRL would be insufferable or alienating, but is part of that medium's means of showing how passionate he is about women. Instead the performance brings it to a more charming level - he'll use corny one-liners on women, and while it's not something everyone welcomes or is receptive to, the effect feels more like someone making a playful joke that states his amorous intent while being respectful. The lines are delivered with a level sincerity that the actor can work leverage well with the material to convey the intent of the characterization in context of the story, but more sutiably for the medium.
I think that's why OPLA was so successful- they brought the essence of the anime- not the anime itself to the screen. Anime characters are always exaggerating and while it looks funny in 2D, it becomes cringe when turned in 3D. And that's why Sanji, a pervert portrayed in the anime, has become a wholesome character in the Live Action. I don't think there's anything wrong with it- characters portraying in new light rather bring new perspectives to the story, as long as the story is kept intact.

He remembers how sleepy and lost Siri could be, he remembers how much Sanji liked women and cooking, and how much nami would smack him if he ate all the supplies and used all their money.
Not really any truth to this, but I like the idea of it.
