  • 24 Meal Prep Lunches in 2 Hours- Sick of eating the same thing for lunch 4 days in a row? You need a freezer stash of meal prep lunches!
My freezer lunch stash makes it easy to swap meals in for a bit of variety.
We are doing a big meal prep session today and stocking up with 24 freezer-friendly lunches. This session took me 2 hours, but let me warn you: I was moving the whole time!
To make it easy for you, I have done all the planning, with a printable shopping list and meal prep plan for you.
Get your printable shopping list & full directions on the blog at: sweetpeasandsaffron.com/freez...
    MEAL PREP:
    -------------
    03:39 - Cook the rice
04:00 - Chop up vegetables for each recipe
06:39 - Prep the chicken thighs or chicken breast
    07:04 - Shred the cheese
07:19 - Gather and open all cans
    RECIPES:
    -------------
    Today we are making:
07:38 - Double batch of Instant Pot Enchilada Quinoa Casserole: sweetpeasandsaffron.com/insta... *note you will need an 8 quart Instant Pot to fit a double batch
08:29 - Single batch of Easy Chicken Curry: sweetpeasandsaffron.com/chick...
10:00 - Double batch of Korean Turkey Meal Prep Bowls: sweetpeasandsaffron.com/korea...
    EQUIPMENT:
    --------------------
    1) 8 quart Instant Pot (if you have a 6 quart, stick with a single batch of the Enchilada quinoa!): amzn.to/2Dlsq1P
    2) 4L (4 quart) Pot- mine is an old Paderno one, similar to this: amzn.to/2VaQqPq
    3) 12 inch pan- mine is a 12 inch Ceramic Non-Stick GreenPan: amzn.to/2Dk3PdK
    4) 24 2-cup capacity meal prep containers. I use Snapware 2 Cup Glass Storage Containers- my top pick! Tricky to find on Amazon.
US- find them at Target (rstyle.me/n/dehwz5cfgx7).
Canadians- pick them up at Real Canadian Superstore
    ---------------------------------------------------------------------------------------------------------------
I hope this inspires you to stock up your freezer! Let me know if you have any questions.
    Happy meal prepping!
    Denise

little 'hack' I personnaly like very much: put a damp cloth underneath the cuttingboard, so it doesn't slide away while cutting. Love the clear an easy to follow prep!!

I looked a lot for something like this... most of the stuff that i find on youtube is "easy quick" meals that have ingredients that i didn't even know that existed.
I recently decided to switch from crappy sad sandwitches (after about 6 months) to an actual meal for work, and I'm really struggling with ideas. So thanks for keeping me fed. Some of the stuff you're making looks kind of intimidating to make, but no matter how bad i mess up, it can't be worst than a sandwich.
I subscribed and I'll start scanning the channel for more ideas.

@@SweetPeasSaffron Hiya! I don't know where you live, but where I live in Richmond Hill, ON, there is a couple Whole Foods near me. I do find them expensive though. I try and buy organic when I can. Even cheaper stores like Walmart have *some* organics. Loblaw near me has lots, but I find them pricey as well. ** > I wanted to ask you what brand of silicone bags you get. I've been looking on Amazon and I see some with great reviews, others say they're hard to seal, or leak. And they have to be easy to clean for me to want them. Boy! If I could (almost) banish ziplock bags, I'd be happy.

Currently rewatching the intro because I skipped strait to chopping. I also wanted to be surprised with what you cooked as you cooked the recipes along. I’m so impressed with this whole video and how thorough you are.
I was pleasantly shocked you don’t peel your ginger👍. Then you decided to use a box grater which I love! Let’s talk about how you are eating the stems!!! It’s my favorite part of the broccoli and I’m glad It didn’t go to waste. The enchilada quinoa sounds amazing. Loved it because you didn’t skimp on the onions! Now I’m glad how much time you took to emphasize the importance of toasting your spices because I see too many people just dumping them into liquids. You have amazing taste in chicken because you love thighs too. That curry recipe I know is amazing!!
This video is a treasure among the sea of ‘easy meals’ with ingredients I have never used. I’m used to making things from scratch because that’s how I grew up. 👏👏👏👏🤝🤝🤝🤝

Here's a little tip to save your knives. If you have to use it to slide chopped food off the chopping board turn the knife around and use the blunt end.
Love the washable glass containers, so healthy as opposed to aluminium or plastic.
If this only takes two hours imagine how much quicker a food processor would reduce the time by.

I like to thaw overnight in the fridge but sometimes I forget. It’s really going to depend on your meal prep containers, the snapware ones I’m using have a Pyrex base and are really durable. I have microwaved on low from frozen in a pinch but would rather thaw completely first 😊

These are good for around 3 months. I notice a change in flavor after around 3 months. These ones stack well in the freezer, so I don't put them in or on anything special. They may get frost on them but I don't notice it altering the flavor until after around 3 months. Hope this helps :)

Question... do you thaw it first before heating it in the microwave? I love this idea but sort of skeptical cause I don't know how it will turn out. Specially the rice.. Will it be soggy after? Please help. I'm a working mom and this looks perfect. Thank you!

Nice video! Rookie question; how long do these meals stay good in the freezer? Thank you!

My general rule is 3 months! After that I start to notice the food tastes like freezer :)

When you're ready to eat it, do you just take it out of the freezer and pop it into the microwave?

    • @SweetPeasSaffron
      @SweetPeasSaffron  4 роки тому +3

I try to remember to thaw overnight but I usually forget. I do warm it from frozen in the microwave but only recommend this if you have really good quality meal prep containers (and leave the lids off). The ones I use have a Pyrex base.

Loved this video, so glad to find your channel. I make quinoa every week for lunch the same way in my Instant pot very similar recipe too. What kind of freezer do you use to store your cooked meals?

It's an upright Kenmore freezer model 22442 (purchased at Sears before they went under)

Sweet Lea Saffron with the Instant Pot Quinoa Enchilada Casserole recipe, any thoughts on swapping the black beans for green or red lentils? I can’t do beans because of gout. Thanks!

I bet that would work just fine, so long as they are cooked first! Hope you enjoy!

Debbi Underwood you can very easily do all of these meals on the stove. You would literally just put all of the ingredients from the quinoa recipe in a pot and cook it. Also you should get an instant pot they’re amazing lol

I am a Jen subscriber that found you. Maybe you could collaborate that way Jen's subscribers can meet you. I don't have an instapot, but found that I can cook most recipes on other devices. I have cooked quinoa in my crockpot no problems. Obviously it just takes more time.

How do you go about rehearing these?
Do you thaw them the night before or just pop right in the microwave the day of?

    • @SweetPeasSaffron
      @SweetPeasSaffron  4 роки тому +3

I thaw completely when I remember, then reheat until steaming hot. Sometimes I will heat from frozen on a low power in the microwave but only recommend if you have really good containers 😊

I'm most interested in concepts. Why do you put the rice separate? Can you freeze pasta dishes? How would you store that (noodles together with the sauce)?

    • @SweetPeasSaffron
      @SweetPeasSaffron  3 роки тому +1

Hi! I put the rice separate out of habit, but I'm not sure it's necessary. You can freeze pasta dishes, though you'll want to cook the pasta to al dente as it can soften in the freezer. Avoid small shapes like orzo; larger shapes freeze great! You should be fine to freeze right in the sauce.

Its easier when cutting cherry tomatoes ...on a flat place on bottom with tomatoes on it. you would take another flat plate , and place over the top ... Hold plate down take your knife and cut them in half.
