6 medium oranges
2 small lemons
900g sugar
8g pectin

How many ounces does this recipe create?
About 35/40
This one is unnecessarily complicated. I use seedless Navel Oranges, cut them up, pass through a food processor, add sugar, water, a touch of cinnamon, and juice of one lemon, bring to a simmer, cover and let stand overnight on the counter, next day cook until all the water is gone and that's it. Works every time and my wife and I love it. My favorite way to enjoy it is as an English Muffin sandwich.
That would be a jam, not a marmalade. If you like the bitter edge, that's the way to go, way easier. But the pith is bitter and if one doesn't like bitter, this fussy recipe is the way to go.

I've made marmalade many times (for a friend and my mom who both love it kinda bitter) but I was never a fan.
Boiling the peels made a huge difference. This is, hands down, best marmalade I've ever made. Thanks, man!
