I’m Jamaican, next time try adding butter beans to your oxtail, it would thicken your gravy girl! But great jobbb!

As an jamaican/ professional chef I would tell you good job even though i would do it an little different. You can add some butter beans and carrots to your oxtail and some butter and 1 tbsp brown sugar to the liquid for the rice and some fresh ginger to the bbq sauce for the jerk chicken but next time make an smoother sauce, other than that good job.🇯🇲🇯🇲🇯🇲🇯🇲🇯🇲 even though I now live in the USA I am still an yard boy Jamaican.

Lizzy Lew Food hey girl, you did good for a first attempt! Your patties looked bomb af, you are right oxtail is expensive but you did well. I cook my oxtail differently from you and you need a Dutch Pot to cook the oxtail in. The best rice to use for rice and peas I find is basmati gives it great flavour and tastes even better the next day. When you cook it again, put less water and the rice will be even fluffier. Great job though as always. Love from Jamaica 🇯🇲 via U.K. 🇬🇧

You did good!! im Jamaican you did the best I saw for an American!! next time use coconut milk and the coconut powder or even the coconuts it self blend that with time scallion, onions no water season the coconut milk and let it boil with the peas until it looks like you have no more liquid ( middle of the pot) then throw the rice in and turn the fire on low and let it cook out.. poke the rice here and there but never stir until it gets Shelly.. 🇯🇲 LIKE I SAID YOU DID EXCELLENT.. 🙏🏾🙏🏾🙏🏾

Kidney beans are perfect....that's what alot of us use for our regular sunday dinner. At Christmas time we use gungo peas which is the pigeon peas. That gives it a more nutty flavour. If you were able to get the traditional grill you would fall in love even more with the jerk chicken. The pimento wood and smoke adds much more to it. Hopefully you get to try the real deal when you visit jamaica. But your food turned out wonderful...especially the rice and peas. That's how us jamaicans love it.

Caribbean green seasonings would have all that grind including pimento peppers and the Scotbonnet peppers as well but great job on your cooking

You did great👌🏾 Yes, unfortunately although my favorite dish. Oxtail is SOOOO pricey; however, really delicious when done correctly. It can be a tough meat and needs to be cooked until tender and you nailed it 🙏 I am fasting on meat for a bit and have considered vegetarianism permanently for a while for health reasons and maybe most importantly, I HATE cleaning meat as it truly grosses me out. But sometimes when I’m
alone and it’s late at night, sometimes I think I can hear the oxtails whisper my name 👀
    🤦🏽‍♀️
