    That was cool to watch. Some Tedious work but now you see why its priced the way it is. I wonder how many workers get spiked per week by the urchins. I'm all caught up, see I told you I was going to binge on all of your videos. Love me some Sushi.

      Their spines are more grabby than stabby. Nobody get's spiked. Gloves are to keep fingers from turning purple, and they are pros. People only get spiked if they accidentally step on one barefoot in the wild. Then, I hear, it really sucks.

    Very cool to watch. Does anyone ship "SUPER FRESH" (meaning without Alum...)? or can you get it that way? Also surprised final packing is done without gloves

      yeah the stuff grows wild here in Australia, I live on the beach and they are literaly accross the road. When the weather is fine all week, I go down in the weekends and sit on the rocks and eat them....they are Huge too cos Australians dont eat them so they just grow and are a pest. Im looking at harvesting them and selling them proffessionall here in australia and NZ. Oh btw the NZ brown sea urchins are the best too. Australia where I live in sydney are black urchins.

      Depending on what part of the world it came from, the taste is usually briny, but also very creamy and rich.

      For fresh uni, once you received it, keep it refrigerated and serve within 2 days.

    What's a box of uni go for at market? Purple sea urchin are friggin everywhere in the rivers and offshore of Florida! I'd just like to fill up a box for personal consumption and serve it with a quail egg at a party. A three liter bottle of Sake at the ABC sells for $14! Let's have an Uni party!

      For the premium Uni it's roughly about $100 for 200 grams.

      It's like a hardening agent to prevent the Uni from melting while it's being transported.
