Miyeokguk | How to Make Korean Seaweed Soup | Vegan Recipe

  • Miyeokguk aka Korean Seaweed Soup is a staple dish in every Korean home. This soup is traditionally eaten on birthdays or after giving birth, but can also be eaten all year long, any day of the week. Most Koreans make miyeokguk using beef or seafood. Since this recipe is a vegan version of the old classic, I used shiitake mushrooms and a little bit of mushroom seasoning to pack this miyeokguk with umami flavors. I've never seen any Korean use shiitake mushrooms in their miyeokguk, but when I developed this recipe and tasted it, I knew it was going to be a hit. Get ready for an umami explosion in your mouth when you savor this soup!

    Among the food culture of Korea, special things that distinguish it from the food culture of other countries. //
    1. Perfect vegan food represented by Korean Buddhist temple food
    2. An endless variety of soup dishes
    3. Kimchi: Vegetables fermented with animal protein represented by cabbage kimchi. In the past, only Koreans made and ate it. There are over 800 types of kimchi.
    4. Jeotgal: A fermented animal-based sauce made from seafood. In Korea, there are more than 140 different types of salted fish.
    5. Ssam: It means wrapping all the ingredients you want to eat in various leafy vegetables represented by lettuce. However, unlike burritos, you have to swallow them in one bite, so you need to adjust the amount of ingredients to be wrapped appropriately.
    6. Herbal Medicine Ingredients : Herbal medicine ingredients are not only eaten for special diseases or health, but are also often used for general home cooking. For example, as ingredients for Samgye-tang, Mulberry, Tree Aralia, Eleutherococcus Sessiliflorus, Mongolian Milkvetch, Korean Angelica, Ginger, Jujube and Korean Ginseng are used.
    7. Namul : South Korea is the country that eats the most dishes made with only vegetables without meat and seafood protein. Namul are foods made with one edible plant as the main ingredient. Examples of the types of Namul include Shepherd's Purse, Stringy Stonecrop, Korean Angelica-tree, Korean Wild Chive, Butterbur, Bracken, Doellingeria Scabra, Bamboo Shoot, Chamnamul and Cirsium Setidens.
    // Etc... Korea shows a distinctly different food culture from neighboring countries in Far East Asia (China, Mongolia, Vietnam, Japan).

    That looks delicious! I made a similar soup today with seaweed and mushrooms too!
    I love love love to eat my food as hot as I can get it and often burn my mouth! Ha! But I wouldn’t have it any other day.

    Question: I can't seem to find the Mushroom Seasoning here in UK - Can it be replaced with something else/another brand of Shroom Seasoning, or can we omit it completely?

      You can use dried shiitake mushrooms or try a product like yondu (which is an all purpose umami seasoning sauce). You can also skip it all together and cook the seaweed soup long enough to develop depth of flavor. 😊🙏

    As a lifelong vegetarian/vegan always delighted to have new recipes. I also like using fake meat products. I’m in the USA and I just discovered Korean beefless bulgogi At a store called Trader Joe’s it’s vegan. And I think it’s really good to have fake meat Along with yummy recipes like yours! ❤️

    Can I use Kombu Seaweed in this recipe? Will it taste good/ won’t be unhealthy because of iodine levels in it? Thanks !

      I think kombu might be too slimy and also too thick for this recipe.

    Does it still have all the nutritious Benefits for Postpartum ? Would Love to make it After giving birth and was wondering since i don’t eat Meat. And can i prepare and freeze it? Or does that take away the healing benefits ? 😊

      Many Koreans eat this for postpartum and is very nutritious. Of course eating freshly cooked foods is always best, but I also think freezing a batch for a busy mom could be a great idea!

    Can I boil it for just 30 minutes? I feel like 45 minutes is alot of time and the soup would have probably lost alot of nutrition ( please feel free to correct me)

      Hi! 30 minutes should be okay but the longer you simmer it, the more depth of flavor it will have.
