HOW DO YOU THINK YOU MAKE BUTTER? WITH CREAM! MANY FINE CHOCOLATE PUDDING RECIPES USE CREAM IN PART OF THE RECIPE.IT'S A COMPONENT THAT PREVENTS LUMPING AS IT COOLS.
