I'm with you on the butter basting thing, it's cool if you wanna do it but it doesn't really add any more flavor than just adding a bit of butter/herbs on the steak while it rests
Browning butter makes it way way better. Even saw it in a senpai video (he even called it beurre noisette lol). Coating a steak in browned butter is delicious. But you can just brown butter ahead of time and melt it on your steak and get the same effect. Butter basting kinda sucks because nailing carryover gets way harder, if you'd get 10F on a normal steak, you'll get like 25 on butter basting. Cut out the middle man, top with beurre noisette after your reverse sear.
not sure what that exact brand is, but its a lightweight thin carbon steel pan. I have one that looks very similar from de Buyer. Its called the Blue Carbon Steel ACCESS Pan. Its excellent.
So it appears like many I am confused by the plate under the pan. Is it an actual cooking stove via magic or simply a trivet and the pan is pre heated? Love to know. More so if it is amthe hot plate where the hell do you buy it
Wagyu highest grade is a5. No such thing as a6 wagyu. Beef tips are usually from sirloin which are also beautiful tender pieces. The beef used in this video looks like picanha, not sure if wagyu. But yea, you should be able to reverse sear beef tips
butter basting CAN be a bit of a waste so what you wanna do is put your herbs garlic etc etc and butter into a little saucepan and do it separately, i add some dijon mustard and horseraddish to it as well to get it nice and flavorful, then just use it as a steak sauce. badabing.

@@stevechance150Almost no UA-cam cooks use the stove against the wall. Something I expect about the camera setups and lighting and even sound being harder with the tight space and the range hood and all. Even Kenji will pull out a tabletop burner sometimes though he's about as dgaf as it gets.

But I do worry that he's on a track to jump the shark. What made his show unique was the gopro in real time, only skipping unattended waits, with the actual stove in use, showing how to apply professional techniques in a home kitchen. Now, his show is rapidly trending towards just being another of a million scripted shows with idealized lighting and rapid, jarring camera switches. The control freak is great for experimental consistency (thanks Chris Young), but completely unnecessary for his format. He'll still get the views because he is who he is, but I wish he'd stayed true to what made him popular and leaned into that, instead of pushing to "win UA-cam", like he himself decried what feels like a couple months ago, but was probably a couple years ago. 3 tablespoons of oil? 😂 More oil equals better so not criticising :) just a lol for obs more than a teaspoon. This method of searing is what I learned from Heston Blumenthal. It is my preferred week night method. So easy. My tomahawks are reverse sear now. Colour, flavour, texture, win.

One of the big mistakes people make is not letting the meat rest after cooking before slicing/serving. That makes a huge difference

Isn't reverse searing the exact opposite of what you just did and said? Cook low and slow, then sear is reverse searing.
