- Pavlovas 😋 you either love them, or haven’t heard of them. Ethereally light, crisp on the outside, and marshmallowy on the inside made into single servings! Impress everyone by filling it with whipped cream and topped with your favourite low carb fruits!
4 large egg whites at room temperature
½ cup (100g) powdered erythritol
½ teaspoon (2g) cream of tartar
1 teaspoon (4mL) lemon juice
1 teaspoon (4mL) vanilla extract
1 teaspoon (4g) xanthan gum (optional)
¾ cup (180mL) chilled heavy whipping cream
3 tablespoons (35g) powdered erythritol
½ teaspoon (2mL) vanilla extract
favourite low carb fruits
Yields 6 servings
NET CARBS: 1.1g
FIBER: 0.9g
FAT: 10.8g
PROTEIN: 3.3g
CALORIES: 140

Just want to throw it out there to anyone that hasn't tried Ketoserts recipes yet, I will say that you can pretty much try any of their recipes with great results. I've done at least 10 of the recipes they've posted on their channel, and all of them have been excellent. This was also another very great recipe and I know I can count on this channel to find a great keto dessert. Definitely a go to if I want to use up some egg whites after making mayo. Huge fan of this channel. Thanks a lot. ❤

Ok so this is my 3rd time making this recipe because IT'S SO DARN GOOD. I have made it into a massive cake pavlova, I've made mini meringue kisses and now I'm doing the nests shape. This recipe is incredible and easy and WORKS EVERY TIME. I double the recipe and made 60 adorable meringue pavlova nests for a party and I love that it's a dessert I can actually eat too! AND it's much better to work with the meringue batter with a spatula for shaping AND easier to whip in the Stand-Mixer (in less time too) than the old original non-keto recipe! 11/10 A+++

I made those several time now but they came out soft, i leave them outside to dry the whole night and then they are perfect!i need to learn though to beat them more because i am not sure what the stiff peaks are! Stiff peaks are formed when you lift up your beater and you get a nice peak and it holds its shape. 🤗

Can I use powdered Bocha Sweet in this and in your other desserts that call for erythritol? Bocha Sweet tastes as close to regular sugar as it is possible to get, with no funky after taste.

Hi Mel, I’m sure you can. Haven’t tried it yet but here’s some info.
Egg-whites in a carton are usually pasteurized. ... With a lot of whipping (and more cream of tartar or other stabilizers) pasteurized egg whites (whether from pasteurized eggs or from cartons) can make meringue though it most likely won't be as stiff as those from non-pasteurized eggs.

You list Xanthan Gum in the ingredients (optional?)-what difference does it make in the texture whether we use it or not?
Thank you Cristina! I tried this recipe with or without xanthan gum both works great it’s just that with xanthan gun the center was fluffier and more marshmallow-y if that makes sense. 😊❤️

Thanks so much Holly! After baking, make sure your Pavlova is completely dry and then store it immediately in an airtight container until you are ready to garnish it. You can also store it in the oven, so long as you leave the oven door closed until it is time to garnish and serve the Pavlova.❤️

Can I use this recipe to make one big pavlova? Would I need to adjust the baking time or temperature?
Hi Arturo, yes you can definitely make a one big pavloba with this recipe but I haven’t tried it yet so I’m not sure how long you have to bake it.
Pavlova is iconic here in Australia. And although both Australians and New Zealanders have been fighting over who first invented it, I believe some foodies did the research and found it originated in Germany 😳 , however, it has been found that a lot of countries including the USA have had some variation of this dessert. So let's just say its a universal dessert 👍😍 No matter who invented it its freaking Delicious 😋

Hi! I guess because of the xylitol, erythritol tends to crystallize and helps to harden when cooled.

I am a pavlova aficionado if it came out soft you probably baked your Pavlova on a humid day. Anytime you're going to bake a pavlova you need to check your weather app to see what the humidity is if your humidex is showing anything over 50%, I wouldn't risk making it above and beyond that you need to keep the humidity low in your house meaning don't wash dishes don't be running the dishwasher boiling water or doing anything that will add moisture into the air before after our during cooking your Pav

Hi! Tried macarons like a dozen times. Unfortunately no luck, looks beautiful but NO FEET. Tried it with all keto sweeteners I could think of but same results. Then tried it with sugar and guess what.. it came out perfect! ☹️

@@ketoserts After my careful consideration. I finally compromised! Last weekend, I used sugar for Shell and the Fillings I stayed Keto. They turned out fluffier with feet. At last! lol SO HAPPY!
Why I made it but become brown?
It’s because your oven is too hot. Every oven runs different. You may want to reduce the heat and just make it around 190°F to 200°F and place your baking sheet at the bottom rack. ❤️😊
