Hi! Thanks for showing this recipe! I got a 10x8 Detroit pan and am eager to try it in Roccbox. How would you go about feeding a larger crowd? Is it necessary to buy more pans? You show that the final proofing is done in the pan. I am just wondering if one could proof the „balls“ in similar sized containers and transfer them to the pan once the first is finished. The pans are quite expensive if you are living outside the US …
That's what I do. Have one proving in the proper pan and then a second dough proving in a oven tray ready to switch over to the Lloyds pan when the first has finished cooking.
