The yeast in the pumice was the same yeast that the wine maker pitched in: if he just let it ferment without pitching yeast then what you have in the pumice is wild yeast, of course. That pumice had billions of yeast cells in it and there is no need to pitch more yeast. Some people don't distill it, they make a kind of Rose wine. Also you could had made Grappa from the pumice by just putting it in the still with some water to create steam because the pumice had the same level of alcohol as the wine and you would had made the real Italian style Grappa. That is, you don't need to add sugar and re-ferment. You can get a better taste if you distill it a second time in a pot still.
That's a style I remember from when I was really young. Saw it in Missouri at a guy's place I worked at with my brothers to earn a couple bucks. Was a fun job and he didn't let near the still LOL.
