    I watched and learned from this video when I was 13 years old, about 12 years ago. I've never cracked eggs with two hands ever since. I came back here just to slap myself with nostalgia.

      Cracking an egg with one hand kinda just came naturally to me I tried it the first time and messed up but the second egg I could do it perfectly lol and yeah I haven’t gone back to 2 handed cracking since either because that’s just more time consuming

    actually, i had to hold my hand that way so people could see what was going on. Usually i just just drop the egg straight down and it doesnt touch my finger.

    Here's a tip when you get shell fragments in your bowl use one of the halves to fish it out. Works like a charm. I have also found that if you crack the egg on a flat surface it's less likely to flake off in the bowl.

    Thank you for showing me this. I am a "foodie" and watch your recipes all of the time, but I really need to know this technique. For the past thirty years, I have only been able to use my right hand. I still have not got one handed egg cracking down perfectly. I certainly appreciate your lesson and technique!

    Just want to say how awesome you are again. I’ve been cooking almost everything from your videos. I agree people need to experiment and learn themselves. Alton Brown explains science side of it helped me out in the beginning a lot, many years ago. But i learned all on my own. Now I’m using recipes 25 years later and I’ve done 5 or 6 of yours in the past month. I’ve never been let down yet. You rock! (Using my hand in the air to get this feeling for the egg lol)

    Eggs from fridge dont break well. Room temperature is better usually. First make a break then egg apart.

    I love this video! Why? I'm always figuring out how to do things with one hand (my left arm & hand are paralyzed as the result of a cerebral hemorrhage/stroke. I'll be practicing with the golf balls in hopes that I won't be needing to pick out bits of shell every time! I'd like to post your video on my FaceBook page, may I?

    a tip is to smash the egg as hard on a surface possible.Making the shell easier to pull apart

    One of the things that took me an embarrassingly long time to figure out was how to crack an egg without breaking the yolk. I always thought I wasn't cracking the egg carefully enough. One day, it dawned on me that I was holding the egg too high above the pan, and dropping from that height was going to crack the yolk about half the time.

    Random tip about cooking with eggs: When adding eggs to a mix, crack them first in a separate bowl, I once ruined a recipe because I went straight in with the egg it had two eyes and was a forming tiny beak. I had to toss out the whole mixture.
    Edit! I just found an old pic I took of it and it looks like I didn't actually pour the poor thing in my bowl, (I must have been thinking of the two other times I found BLOOD in my freaking eggs). Anyway I have no idea how I could've gotten a forming bird (or blood) in my eggs because store bought are not supposed to be fertilized DX

    If you get skilled at it, no egg touches your hand. I learned how to do it a while before I seen this video, and it's really not hard. You don't HAVE to go as slow as he's showing you, but you also have to keep pressure in mind.

    Just did this with 2 eggs. Cracked gently in middle and then middle finger push on crack while pushing away both sides. Wasnt as smooth as this but had 2 perfect eggs on pan and no breakage of yolk. First attempt and all :-))

    Hello FoodWishes
    you were lucky, that the tiny shell
    did not fall into the bowl.
    A pro will always use both hands
    to crack an egg !
    You have to turn the egg
    by 180° and crack it
    from top using
    both hands.
    Thus, there will be no more egg shells
    in your frying pan.
    French Chefs do it that way !
    By the way, I use a magic tool
    to crack the egg and
    separate it.
    PS:
    I fry the fastest scrambled
    egg of the world !
    (in 58 secs)
    If the pan is already hot,
    I am still faster !
    (28 secs!)

    the position of the middle finger is different from when u hold the balls vs the egg... with the balls, ur middle finger moves forward along with the index finger and thumb but with the egg, ur middle finger moves backward

    Why is this so fckn hard for me??? (And attended culinary school) My instructors ALWAYS got on me for not using 1 hand because they said it could fall with the contents of the him and white regardless if you use a bowl. (Which I've never had that happen) After watching this I think just might be able to do it.

    did you know if you held a egg in the palm of your hand no matter how hard you squeeze it wont break (as long as you dont use your nails).
    it has somehting to do with its circumfrance or something like that

    I think he means, use both hands to crack the egg shell so that you do not touch the raw egg that is inside the shell. Any other meaning would require telekinesis. =P
