I'm not sure how detailed an explanation you're looking for but in general, the idea is that a specific odor is a particular group of odorant molecules that are being released. These different molecules will bind to different receptor sites, stimulating different olfactory receptor neurons. This overall pattern of activation of many receptor neurons will then be perceived as the specific odor (the process of identifying the particular odor will also involve memory). This doesn't mean that all of this knowledge is settled, it just means that my goal was to provide a foundational understanding of concepts and theories that psychology students should be familiar with, as well as develop the ability to incorporate new knowledge that may challenge existing ideas. I've tried to include critiques and unanswered questions for many of these topics, which means that unless there is suddenly a major groundbreaking finding that completely changes the field, the knowledge from this course should prepare you to interpret new findings or updates and integrate them into what you already know. So you should generally find that this course covers similar concepts as any recent introductory textbook, though the focus and the specific way an instructor assesses students will vary and this needs to be considered when preparing for that particular class. This also affects one's sense of taste but otherwise there aren't serious effects. There are dangers of not being able to detect things like the smell of smoke, gas leaks, harmful chemicals, etc. but hopefully these don't influence everyday life much.
